I'd imagine it's also because they're under the impression that a "professional" will be... well, all the thing that the word implies: experienced, clean, efficient, attentive, and so forth. They're looking for a pack of experiences to be used for a particular need (or want), and they think that the most expedient way to get someone to fulfil that is a prodomme. Perhaps tehy're right, perhaps they're wrong, but I see it as something outside "the scene." It's like me being taken on a guided tour of Argentina; I'll have been there, but I won't really have an idea of what it's like to live there.
