Smothered Burritos
 
Make your burritos ya fav way, and put them in a large baking pan (cake pan or something). Get a can of cream of chicken soup, mix it with a 1/2 can milk in a sauce pan and warm it up. You can add a can of diced green chile's if ya wish, however i leave that out because of the um's, they dont like them. Pour this evenly over the burritos. Cover this with as much grated cheese as ya like, cheddar or the mexican style cheese, and bake at 375 in ya oven until it is all gooey and melted!! Let cool a few and then serve!!

I used your smothered burrito recipe with frozen burritos and rather than putting shredded cheese on top, I mixed some Ragu Mozzerella and Parmesan cheese sauce in with the soup, heated it up then poured it on top of the burritos and baked them for 20 minutes.  MMMM MMMM GOOD  Just a variation but I have found that the Ragu Cheese Sauces are VERY GOOD and not very high in calories per serving, especially when you spread it out in a casserole type dish.

My mother, bless her, was/is not a good cook. I started to buy cook books and read them
when I was about 13.
It was like finding treasure chests filled with delicious possibilities. Now with the internet you can find all kinds of different dishes.
 
I would find out, if you don't already know, the kinds of foods that the people you cook for like, maybe have them make up lists.
After finding out a bunch of their favorites, google them and you will find lot's of different ways to fix and combine favorites so all will be content.
 
If they vary a great deal with what they enjoy, let everyone have a special night to have the most say with what you will fix, that takes some of the pressure off of you.
 
Say everyone likes burgers, google and find many ways to fix them, different things you can add to appease all etc.
 
Have one night as "New Dish" night where you find a recipe of something new to try out, you'd be surprised that more than not you will find something that goes over well. This will encourage everyone to expand their willingness to try new things and also expand your knowledge about food and how it can be a fun adventure, instead of the same old things all the time.
