You'd need a place to do it obviously, for a group you'd have to rent a campground or private land unless someone happens to own a large chunk of land. You need to set up boundaries and mark them off (orange flags on trees, be sure to take them down afterwards, leave things as good or better than you found them). And you also want to make sure the area is reasonably safe... tends to be a bad thing if someone accidentally runs off a 50 foot cliff no one mentioned was there. You'll also want to keep in mind the weather and when things like mosquitoes and ticks are at their worst (and avoid them, use insect repellent, etc.). Having a first aid kit on hand is a must, I guarantee you there are going to be scrapes and scratches... and then there's that wild patch of blackberries they always seem to stumble into... thorns and nekked subbies aren't a great combo... well okay I think so but then I'm a saddist. Paintball guns can be a fun addition, but as Mike pointed out, use low speed guns because they can and will leave bruises! Actually even the low speed ones can leave bruises so don't use any of them at close range (say under 50'... unless she's really a masochist... and never aim at the face regardless!). Never use a real knife for "capturing", but you can get or make some fake ones with felt wrapping the "edge" dipped in ink, likewise you can use ink and homemade stamps to "mark" your "trophies". Oh and keep track of the time... most people seem to get lost in the woods very easily, especially after dark, so either allow a couple of hours for everyone to come "in" before dark or else have some experiences woodsmen/former boyscouts/rangers on hand to go find the stragglers. You might also set up some marked caches of water, energy bars, first aid kits, flashlights, glow sticks and blankets in the designated hunting area... just in case.
