That's a hard, hard limit for me. Anything with yeast or meat extract is a NO NO! Sends my condition off on TIA-sville.

Which means I guess I won't be able to sample all of the yummy foods I've read about here.

For all of you saying that Spam's a hard limit, consider the following:
Spam is specifically the 2 cuts of pork - shoulder & ham (aka pot roast & ... er, ham).
Sausage, luncheon meats and hot dogs aren't. Heck, even ground beef is random trim from a cow and nothing specific at all...

Which is nastier?

Which did you put in your mouth last?

I put canned corned beef in my mouth last. Tonight is goulash with Boca fake meet crumbles. They are acutally good in a lot of things once you get past that they are sorta styrofoamy in texture.

Actually, the Annie's crumbles are soooo much better than the Boca ones - they have the right texture.

But they both have more synthetic ingredients in 'em than SPAM!

Spam itself isn't a hard limit for me, but if it contains meat or yeast extracts, then by association Spam would have to be a hard limit.

The common compound in both of those triggers is carbolic acid. It's how they're extracted chemically.

There's none in SPAM.

But just to be safe, I'd give up ALL meat and leavened bread if I were in your position....

In my case, it's the tyramines that are to be avoided. Anything aged is a candidate for my hard limit "no no" list: cheeses, meats, along with the usual suspects such as wines, caffeine, chocolate, etc.

I can eat baked breads as long as they sit for over 24 hours. I'm not sure why that is, but that's the deal.

The still active yeasts have died off by that point.

Perfect for using to make a SPAM sandwich!

3oz spam, sliced as thin as possible.
1oz good camembert, slabbed long and gooey
thinly sliced totmatoes
a tiny bit of maitre d' butter
2pc good bread

hit the bread with the butter, cheese and tomatoes on one piece, the spam on the other. Toss into a 400*F oven until the cheese is melty and the spam starts to crisp. combine, slice and eat.

As if I needed another reason to go to HI... <sigh>
I tend to be very much about historical recipes and the evolution of food habits. One of my pet projects (in addition to researching and recreating food from Hellenic Greece to Republican Rome) is looking at post-war North American food and how the general "prosperity" mindset depicted by the media corresponded with the realities of daily life. And SPAM is a great illustration of it - it starts out as a despised but useful subsistence food, develops into a convenience, devolves back into being despised (such as being called "mystery meat" by the uninformed)) and has a second-life for kitsch value.

And one of the more fascinating illustrations of American colonialism and cultural insertion can be found in Hawai'i... Combine with the fact that a couple of my favorite net buds live on Oahu... Yeah, I need to go. Probably happen the same day I go to Australia and Antarctica to complete my collection of Continents I've Walked On...

Personally, I believe that if you want to get a true view of history and the way people live, you should look at what's for dinner.

BTW - SPAM musubi is very very good with a bit of wasabi and gari...
