A simple roasted chicken, which is why i want the sides to be a bit exotic.

Well, real and properly made ratatouille is yummy unless you have folks who hate tomatos and/or red peppers. Stuffed artichokes, also very good, a portabella mushroom gratin, layered cerlriac (celery root) and potato baked with cream and butter (very french), many different combos of braised veggies, roasted baby potatoes, carrots, onion, garlic bulb halves and lemon wedges, simply roasted or pan sauteed cherry tomatoes with garlic, basil and olive oil. I could probably go on all night! [:D]

Please repost your knowledge of Turducken.  I only chose Paula's because her Brine seemed like the best.  All I have gotten is what is on the Food Network.  I might have one for Easter and use a different recipe.  Besides someone else might be interested.

I made fresh cranberries for the first time on Thanksgiving.  In the past I always had my hands tied by the family and the canned versions.
Incredibly easy to make..much cheaper than the can even.  Tastes better to...depending on how long you cook them you can still have the puree type.
Anyway, after they burst...which is basically boiling water..then adding the whole fresh cranberries and stirring them from time to time.  They burst...you could call them done then if you like whole...or keep cooking them until they become mush.
Eat them that way when they cook or add
I added 4 ounces of crushed pineapple and a packet of unflavored gelatin and left it to cool that way.  Added a bit of a zest to them...much different than anything we had tasted in the past.  Great way to get your vitamins.
