Ghita, give this one a try..... 1 C butter or margarine (stick type) 1 C brown sugar 1/2 C sugar 2 eggs 1 tsp baking soda 1 t cinnamon (but I use tons more, cuz I love it!) 3 C oatmeal 1 1/2 C flour all the raisins and walnuts you desire...... I usually mix the sugars and butter together first, then the eggs and the small amounts of dry ingedients, THEN the raisins and oatmeal, THEN add the flour. Bake them 10-12 mins at 350. The secret to them being soft is to make sure the dough is stiff, and use an ice cream scoop to drop it on the cookie sheet. Don't over bake them, they are done when they don't give when you touch them. These won't spread out too much, and they tend to look a bit undercooked, but trust me, they are nice and soft and chewy. I also use Splenda instead of white sugar, and they come out fine......I have diabetes issues.....damn it! Good luck!
