i think the key to cooking vegetarian or vegan (and it can help with the carnivore side too) is having fresh spices and herbs...it really shows up in vegetarian cooking when the spices and herbs are stale...Najak gave you some great avenues to go with, my absolute favorite website to get recipes from no matter what i am cooking is http://www.recipezaar.com and here are over 1300 recipes when i searched for vegetarian main dishes - http://www.recipezaar.com/recipes.php?q=vegetarian+main+dish but i would suggest playing around with the site a bit if you don't find something you can use with my seach, like searching for recipes of the dishes that Najak suggested...

or just order in..lol...

I once stayed with a bunch of vegetarians, they fed me meat, or what I thought was meat, looked ok, tasted ok, but I found out was soya.But they did try to accomodate my needs, despite their feelings on the subject.

Perhaps feed the guests soya, or what looks like meat but made from soya, just to create a bit of fun.




(Once did a BBQ with veggies and their soya sausages, trouble was, their meat free got mixed up with our all meat, no-one noticed the difference, I have no problem eating veggie, but there was a bit of disgust the next day, just from the thought of what they might have eaten, whether they did so or not)

I guess you are looking for a recipe that will be vegetarian, as well as keeping your meatloving self happy, right? Cooking two versions is just a nuisance.
This one is really tasty, and not lacking anything tastewise.

Chop some onions, red ones are best in this, heat a pat of butter in a skillet and put the onions in.
While the onions are sauteeing, chop some garlic and a bunch of mushrooms. Portobellos work nicely.
When the onions are just starting to brown, throw the garlic and the mushrooms into the pan. Sautee until all the fluid from the mushrooms has evaporated.
Deglaze with a glass (or two or three) of whitewine and throw in some peas. Fresh or frozen,not canned. Let simmer till reduced by aproximately half.
Fill up to the desired amount of sauce with heavy cream. (Yes, a lot of calories, but it is a special occassion, right?)
Now, at this point you can put in a bunch of shredded parmesan or romano,or you can leave the cheese out. Both versions are very tasty.
Season to taste with salt, pepperand muscat.
Serve over tagiatelle.

There are no measurements, as I always cook without measuring. However, this sauce has turned out deliciously every time. Just adjust the amounts to your taste.
