It's going to sub zero temps this weekend so I need yummy comfort food. I've decided on old fashioned macaroni n cheese but I can't think of anything else to make. Brisket is out because I've done that twice this month, so any ideas?

Pot roast?  Meatloaf?  Chili?  Homemade chicken pot-pie (or chicken n' dumplings)?  A big pot of stew?  Lasagna?

 Ooooooooooh yes! I will do a roast chicken and them make some potpies from that. Yay thanks! It's hard to think up recipes when I feel like I'm starving to death lol, that oatmeal at 4am was a long long time ago.Mmmmmm food.

Enchiladas de Pollo y Queso (Chicken and cheese enchiladas)

5 tablespoons butter
1 cup chopped onion
2 cups cooked chicken, chopped or shredded
4 oz chopped green chiles
1/4 cup flour
1 tablespoon chili powder
1/2 tsp ground coriander
1/2 tsp ground cumin
2 1/2 cups chicken broth
1 cup sour cream
1 1/2 cups shredded Monterey Jack
12 small flour tortillas

Melt 2 tablespoons of the butter and cook onions until softened. Remove to a bowl. Add chicken and green chiles to the bowl and set aside.
 
In same pan, melt remaining butter. Blend in flour and seasonings. Whisk in chicken broth. Cook, stirring until sauce boils. Remove from heat. Stir in sour cream and 1/2 cup cheese. Stir 1/2 cup sauce into chicken mixture you set aside earlier. Spoon chicken mixture into tortillas and roll up. Place in 9x13 pan. Top with remaining sauce and cheese. Bake uncovered at 350 for about 25 minutes.

A nice cold weather breakfast dish (good for breakfast or dinner)... This is a hearty breakfast "casserole" type dish, and is a bit different from the standard breakfast casserole.  The croissants stay crispy on the top, and is a nice contrast to the filling.  I get the large buttery croissants from the bakery at Costco.  If you like bacon, you can add some crumbled bacon when you add the sausage.
 
Croissant Breakfast Casserole
4 large plain croissants
1 tablespoon butter
2 cups sliced fresh mushrooms (optional)
1/4 cup sliced green onions (optional)
1 lb bulk pork sausage (mild or spicy, your choice)
6 eggs
1 1/2 cups milk
1 teaspoon salt1/4 teaspoon pepper
1 cup shredded swiss cheese
1 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Split croissants in half and place bottoms cut side up in one layer in a 9x13 casserole dish.

Melt butter in a frying pan and saute the mushrooms and green onion until tender and liquid has evaporated.  Set this aside.  In the same frying pan, cook the sausage thoroughly.  Drain the grease.  

Beat together eggs, milk, salt and pepper.  Pour half over croissants, layer mushroom mixture, sausage and cheeses on top, then pour over remaining liquid.  Position croissant tops over the bottoms, cut side down.

Cover with foil and let stand overnight in the refrigerator. In the morning, bake at 350 degrees F for 25 to 30 minutes or until set.  If the croissant tops don't seem crispy, remove the foil and return the dish to the oven for another few minutes.

Now that you've eaten, and it's settled a bit, how about a nice warming adult drink?  This recipe serves four.

Hot Minty Cocoa

1/3 cup unsweetened cocoa powder
1/3 cup white sugar
1 pinch salt
1/3 cup boiling water
3 1/2 cups whole milk
1/2 cup heavy cream, light cream, or half & half
3/4 teaspoon vanilla extract
6 ounces peppermint schnapps (1 1/2 ounces per person)

Combine cocoa, sugar and salt in a saucepan.  Whisk in the boiling water, and over medium high heat, return to boil, whisking or stirring constantly.  After it reaches the boil, reduce heat and simmer and stir about two minutes.  Stir in the milk and the cream and heat until just under the boil (steam will rise from the pan and you will see bubbles around the edges).  Remove from heat and add vanilla.

Pour into four mugs and add 1 1/2 oz peppermint schnapps to each mug.  Top with whipped cream, chocolate shavings, a sprinkle of cinnamon, or the garnish of your choice.  This makes a very good hot cocoa for people of all ages, without the schnapps.

Several things come to mind, but you did say "comfort food", so here's one of my favorites:

EGG IN BASKET 2 slices bread
2 eggs, med.
ButterButter both sides of bread. Cut hole in middle of each slice of bread. Put buttered bread in frying pan on medium heat until lightly browned on one side. Flip bread and crack egg and put in the hole. When egg is cooked and bread is brown, flip over and cook a few seconds, remove to plate.

Solid and simple always works on a cold day.  Personally, I'm partial to meatloaf.

OATMEAL MEATLOAF     

1 lb. hamburger
1 egg
1/4 c. ketchup (for something more zesty substitute Heinz 57)
1 tsp. Worcestershire sauce
1 small white onion, chopped fine
2/3 c. oatmeal
1/2 c. stock
Salt and pepper
Poultry seasoning

Mix egg, ketchup, Worcestershire sauce, onion, salt, pepper, and poultry seasoning. Stir in stock or water. Mix in hamburg and oatmeal. Shape into a loaf in glass baking dish.  Bake about 1 hour at 350 degrees.

Some mashed potatoes and broccoli with cheese and dinner is served!

CalifChick I'm going to try your breakfast casserole recipe this week, it sounds fantastic! I ended up not liking the mac n cheese, there wasn't a good balance of cheeses. (Too heavy on the gruyere for my taste) but the meatloaf recipe I tried was honestly the best one I've ever had & I've made meatloaf for decades. Today is leftovers, I love love a cold meatloaf sandwich.Meatloaf that serves 4



1 1/2
lbs ground sirloin, ground veal & ground pork combined

1
cup cracker crumbs and oatmeal combined

1 1/4
teaspoons salt

1/4
teaspoon pepper

1
large egg, beaten

1/2
medium onion, chopped

1/2
cup canned tomato sauce or V8 as sub

1/2 
cup ketchup


tablespoons firmly packed brown sugar

1/2 
cup water.

2
tablespoons prepared mustard 


tablespoons vinegar  (I prefer apple cider not white)
  1. Preheat oven 325 degrees.
  2. In a large mixing bowl, combine ground beef, crumbs, salt, pepper, egg, onion and tomato sauce.
  3. Mix lightly.
  4. Shape into a loaf and place in a baking dish.
  5. In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
  6. Brush the loaf with this mixture and place in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.
