kisshou you can do a few things: 1. use a pan of water in your oven. Put it in when you preheat so you have a steamy oven when you bake the bread. 2. Use a tablespoon or so of butter and coat the top of the loaf when it is nearly finished baking. That works too. 3. Use less bread flour and more all purpose flour. Bread flour has a lot of gluten that gives it a great rise but it also creates a crust. Use these ideas for just about any regular bread loaf (betty Crocker cookbook has good basic ones) and you should get what you want. Y
