I forget which feminist writer said it, but it was something along the lines of "few occupations require either a penis or vagina. Outside of those, gender should not be a matter of interest."
Since Dommes and Doms alike both urinate (and tend to share that twisted sadistic mind) I will answer with enough confidence to speak for ...25% of the dominant community.
The simplest response (outside of bladder relief) is that watersports convey dominance. It's rare to find a dominant who is into watersports, but prefers to be the bottom. There are some (there are always some) but not the majority. In an animalistic way, it is marking one's territory. In a D/s way, it is just another on an endless line of methods to exert power.
Another explanation stems from sadism. If the bottom does not wish it, but as a submissive accepts it, the suffering of the bottom will please the top.
Personally I find watersports to be interesting. I presume the true pleasure comes from when the mind is in an empowered (or shattered, for the submissive) mindset. I call this mindplace "cumdrunk".
