I've noticed in the past few days that a few shopgirls I've talked to have been fiddling with their hair when I talk to them.
I understand that this is supposed to mean that they are attracted to you.
Is this a subconscious thing or do they do it on purpose?

Some girls just fiddle with their hair and it doesn't mean a thing. 
Some girls do it because they know it's a flirty thing.
Some girls do it without realizing it.

I fiddle with my hair becasue its long and gets in my way often. It has never been an indication of anything more than my secret desire to shave my head and be rid of the damn stuff some days.

The hair alone is not an indication.
How they look at you. Constantly at your feet or hand or anywhere but your face... uninterested.
At your face, not really what I would consider interested.
At your face, looking away, back to your face, slight smile... that's likely flirting.

Just remember office antics can get you fired.

I stroke and/or toss my hair when I'm attracted to a man.
I run my fingers through it repeatedly when he's boring or irritating me.
I pat his hair when I'm REALLY attracted.
