I always zero in on a FRIENDLY face, then scan the audience while I'm talking to make it appear that I'm not freaking out, but I always end right back at the FRIENDLY face...usually a friend :))  Break a leg!!! Oh, make sure you don't have anything hanging out of your nose beforehand...just saying.

You know the material, right?  Then you have nothing about which to worry.  Remember, most of the people in the audience don't know the information as well as you do.

I don't look anyone in the eye directly.  I like the foreheads of the crowd. 
It looks like you are making eye contact without having to look at them directly.
