Hey everybody -
I thought we could share some recipes that make it easy to please and yet easy for us.... anyone else interested?

*Jap Chae -

one each:
zuchini, yellow squash, small onion, carrrot

some pork, sausage, and/or shrimp

All the veggies and meat cut into tiny diced pieces.
Cook the veggies and the meat  until done
add some soy sauce, tamarind, and hot pepper flakes to taste

Cook a package or two of rice noodles in boiling water (3-4 minutes) then strain and rinse with cold water

mix it all together and
eat hot or cold.

You could leave out the sauce and add some cheese and tortillas and make the above into fajitas. I would leave out the carrots though, maybe replace them with mushrooms or something?

I love to cook.  :)  Here's a recipe just in time for berry season coming up fast for those of us in the Northeast... these muffins are the best thing you will ever put in your mouth... lol, well maybe the second best. [;)]

Blueberry Muffins

2 large eggs
1/2 cup brown sugar
1/2 cup vegetable oil
1 cup heavy cream
1 1/2 t vanilla
1/4 t FRESH GRATED nutmeg (that is hugely important)
1 cup flour
1 cup whole wheat flour
1 T powder
1 cup toasted, chopped pecans
1 cup fresh-frozen blueberries (that is, get 'em fresh, but flash freeze them a couple hours before using them... this method prevents the berries from "bleeding" into the batter.)

Preheat oven to 400.  Prepare tins with papers or spray. 

Beat eggs in a large bowl with a fork.  Add sugar, oil, cream and vanilla and stir with a wooden spoon. 

In another bowl, sift nutmeg, flours and powder. 

Add egg mixture and stir quickly with wooden spoon just until blended - about 15 seconds.  Fold in nuts and berries. 

Spoon into muffin tins - about 1/2 cup - 3/4 cup per tin.  The batter should be thick and pasty and slightly over the top of the muffin tin hole.  Loosely place the batter in the tins; don't pack it in.  Bake until golden brown; about 18 minutes.

They freeze beautifully to have on hand for special breakfasts anytime.

Blue Cheese Omelet

This is one of my Sir's favorite dishes.

Peel and slice a Granny Smith apple and lightly saute in butter
Microwave bacon (2 strips per omelet)
Crumbled blue cheese, about a 1/4 cup

Make omelet and above ingredients. Fold, let cheese melt, serve and enjoy. It really is so good!

Low carb sadnwitch wraps:

1 package tortilla bread
1 package shredded cabbage
1 set "stoplight peppers" or substitute your favorites.
1 package deli sliced turkey
1 jar low cal mayo

Mix the cabbage, mayo and peppers (diced or pureed) in a bowl, and apply to tortilla bread. Add turkey slices. Wrap and serve. (A great lunch, and fun on a picnic!)

pot roast is easy.

chop chunks of potatos and onions, carrots if you like, throw in mushrooms
splash with w.sauce, cranberry juice or sherry, salt and pepper.
cover.
start cooking at 300 degrees, wait an hour, turn down to 275, cook until disired result.

Bacon covered scallops =)
Takes 5 minutes prep, 15 mins cook time, and you can surprise him with a plate full of goodies. (after eating your half- they are good, he might not share, take no chances!)

Preheat oven to 350

Half cook 4-5 slices of bacon
(varies on what size scallops you use, I prefer small ones and just use scissors on the bacon)
Wash some scallops
Wrap each scallop in a piece of bacon and stick it with a toothpick.
Squirt some lemon juice in and on each one.
Put them all on a cookie sheet, spaced enough that none touch.

cook 15-18 minutes, or until they smell just right. ^^

Supposedly an appetizer, but I would happily eat for dinner, and never met anyone who didn't love them.
And so easy to make!

Mine is really easy:

Bacon covered bacon.

Cook bacon.  Remove from grill, set in 3 paper towels, cover with 3 paper towels, press lightly.

Repeat until all bacon is gone from package.

If you feel the need for something appropriate to drink....beer is always a good choice.

set aside.

[:D]i think i invented this dish, its realllllllllly yummy

equal parts of
pre-cooked tailless shrimp (cocktail size)
freash skinned salmon cut into cubes

1 tbls prepared garlic
1 navel orange
soy sauce
heat and grease your pan and add in this order:
salmon
shrimp
garlic

just before removing from heat squeeze the orange over the mix
and add a tiny splash of soy sauce

enjoy!

Interesting that you mention that....in my country, we've learned not to be as wasteful as so many others.  We use toast in lieu of paper towels.

Gris, I think that bacon recipe is too complicated for me.  Is there a "bacon for dummies" recipe?  Sassy men *shakes my head.

Hi everybody,
i just went out with lushy and had this amazing fruit dish... it had some combination of ginger, cilantro, bermuda onion and grapes, watermelon and kiwi, whatever.... Oh it was good!!!  Anybody wanna experiment and figure out a good blend?
