Can anyone tell me how to change my profile so that it does NOT say vanilla under my name?  I can't seem to find it under edit profile features.

You can't change it.  It's a count of how many posts you've made on the boards.  As that number grows, the cone will change to other things like BDSM symbols, handcuffs, paddles, etc.
