Have you tried Googling recipe secrets? There are a bunch of cookbooks out that have fast food recipes broken down, can't think of the authors offhand but they are out there.

slaveboyforyou -> RE: KFC (7/30/2008 3:44:39 PM)

I've never worked at KFC, but I can tell you how to make fried chicken crunchy.  Instead of the usual flour breading, you roll your chicken in flour and corn flakes.  It will make the chicken crunchy, and it's actually really good.  I don't think you're going to get the same result as KFC.  KFC pressure fries their chicken, and pressure fryers are expensive.

no..usually when i try to google something it takes 10 years to find what i actually want...with the millions of hits to go thru lol.

You start by taking a bunch of baby chicks. Chop off their beaks and their feet. Put as many of them as you can in as small a space as possible. Feed them a lot of steroids.......

It's Kentucky Grilled Chicken now, or soon will be.  I laughed when they changed the official name to KFC so they wouldn't have the 'fried" in the name, now they are going too far.

monywildcat -> RE: KFC (7/30/2008 3:58:55 PM)

I googled and found topsecretrecipes.com has some great looking recipes.  I haven't delved much into it yet, though.  Perhaps they will have the KFC goodies you are looking for?

slaveboyforyou -> RE: KFC (7/30/2008 4:03:15 PM)

I'm not very fond of KFC.  When I go get chicken from a fast food place, I prefer Popeye's.

Aileen1968 -> RE: KFC (7/30/2008 4:06:57 PM)

KFC uses chicken in their food????   Who knew.

christine1 -> RE: KFC (7/30/2008 4:08:49 PM)

i have to admit, the last time i went to KFC i was dissapointed in the chicken.  now, if they ever mess with their gravy recipe i'll be very upset!

Go to your local library and look at the book.

When I do fried chicken I use Panko crumbs w/spices (salt, pepper, paprika, dry mustard) on chicken that has been soaking in buttermilk, very crispy and seriously yummy. Large cast iron pan, Crisco. Don't crowd the pieces in, they need room to shift around a bit.

Need I ask?

from said cookbook...
K*C Original Fried Chicken
2−3 pounds cut−up chicken pieces
1 Quart Water
3 tablespoons Salt (for soaking)
1 cup milk
1 egg, beaten
2 cups flour
1 teaspoon Accent (MSG)
1 tablespoon salt
1 teaspoon black pepper
Soybean Oil (no substitutions) for frying
Allow chicken to soak in salted water for a half hour.
Mix egg and milk in a bowl. Mix flour, Accent, salt, and pepper
in another bowl. Preheat deep fryer to 350F, or place 3/4 inch
oil in a skillet set on medium.
Dry chicken with paper towels. Dredge in flour mixture, place in
milk/eggs, and then back to flour mixture. Do this one piece at
a time making sure that there is total coverage over entire
surface of chicken in each step.
K*C uses pressure cookers to fry chicken, which is risky to do
at home. If you are using a deep fryer, fry a few pieces at a
time for about 20 minutes, covered, turning occasionally.
Likewise, if pan frying, cook, covered, turning occasionally
for about 30 minutes. As always with chicken, check the middle
of a large piece to check for doneness.
Allow to drain on paper towels when cooking is completed.
