It means that he doesn't have the patience or relationship skills to inspire your submission and to lead you slowly enough that you don't freak out into difficult activities. He could have just as easily said that he isn't capable of being a real dom for you and that he is just into play and not into understanding your heart and mind and that he's just playing at the lifestyle.

In a nutshell, he's a twit who got upset because you are a real person with real and oftentimes thorny emotional reactions, and not the perfect slavegirl he sees in all those porn movies. Next time learn a lot more about a person than their interest in watersports before you decide to submit.
