Why wouldn't the polite term "ma'am" work for someone you don't know?

If you know them, you should go by what they want to be called, nothing more, nothing less.

Ma'am is big in the south.   In the Northeast where I have lived all my life . . . not so much.  It's not that everyone doesn't like it, but the ones that don't really tell you.  My friend has a blog about the subject but I am too lazy to find the link.  We argue about language a lot . . .

When I've seen a partner naked, waiting for me, just before making love.  That's when the word "Goddess" springs to mind.  But it tends to be said under my breath.  I figure the lady in question might just get up and run away otherwise . . .
