In my experience, the only solution is to find a good, honest fish merchant and cultivate a good relationship with him ( Blowing him may be a good idea ). Many will assure you that you are buying sushi grade tune, but, sadly, they fib. I don't know where you live, NV, but if there is a seafood market or waterfront shops, that's a good place to look.
