I think that in the US where service is usually not included on the bill and wait staff is paid an hourly pittance, the term "gratuity" is a misnomer. A gratuity is a gift. In this case, it's not a gift at all, but payment for service. I worked for years in the restaurant business at all levels and think that people often treat servers in a way that they would never treat anyone under other circumstances. Also keep in mind that servers are usually part of a team that includes kitchen staff, bartenders, bus persons and managers that sometimes give them more tables to serve than they are capable of doing. Nevertheless, servers are often blamed for things that are beyond their control. It's a tough job. Having said that, I tip according to the service that I receive. For good, competent service, I tip 20%, more for excellent service, less for poor. However, I do pay attention to what's going on in the restaurant and take the other factors I mentioned into account. Attitude counts a lot with me.
