I once made someone a red wine and Tilapia dish. A good amount of butter, some fresh garlic sliced and crushed, cooked on lmedium with a few torn fresh basil leaves. Add some capers with a bit of the vinegar they are jarred in, then add your tilapia. Pour about two small glasses of wine (I used Pinot Noir), and cook until the fish is finished. He said it was delicious! Green apple (peel included!), red bell pepper, and fresh mint leaves, cooked on low until soft with a bit of olive oil. Throw it all into a food processor, then spread on thin crackers, adding cheese if you want (brie or feta work). Loquat curry is also amazingly delicious, if you can find loquats (better if you can find them fresh, but canned work as well).
