I love these. I usually make a miniature version of them to serve as appetizers. I use egg roll wrappers or, if I want them to be extra mini, wonton wrappers. I also prefer a salsa ranch dipping sauce instead. But here is the original version of the recipe.

Just Like Chili's Southwestern Egg Rolls

1 chicken breast fillet
1 tablespoon vegetable oil
2 tablespoons minced red bell pepper
2 tablespoons minced green onion
1/3 cup frozen corn
1/4 cup canned black beans, rinsed and drained
2 tablespoons frozen spinach, thawed and drained
2 tablespoons diced, canned jalapeno peppers
1/2 tablespoon minced fresh parsley
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
dash cayenne pepper
3/4 cup shredded Monterey Jack cheese
five 7-inch flour tortillas


Avocado-Ranch Dipping Sauce:
1/4 cup smashed, fresh avocado (about half of an avocado)
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon buttermilk
1 1/2 teaspoons white vinegar
1/8 teaspoon salt
1/8 teaspoon dried parsley
1/8 teaspoon onion powder
dash dried dill weed
dash garlic powder
dash pepper


Garnish:
2 tablespoons chopped tomato
1 tablespoon chopped onion


Preheat barbecue grill to high heat.

Rub chicken breast with some vegetable oil then grill it on barbecue for 4 to 5 minutes per side or until done. Lightly salt and pepper each side of chicken while it cooks. Set chicken aside until it cools down enough to handle.

Preheat 1 tablespoon of vegetable oil in a medium-size skillet over medium-high heat. Add red pepper and onion to pan and sauté for a couple minutes until tender.

Dice cooked chicken into small cubes and add it to pan. Add corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt, and cayenne pepper to pan. Cook for another 4 minutes; stir well so that spinach separates and is incorporated into mixture. Remove pan from heat and add cheese; stir until cheese is melted.

Wrap tortillas in a moist cloth and microwave on high temperature for 1 1/2 minutes or until hot.

Spoon approximately one-fifth of mixture into center of a tortilla. Fold in ends and then roll tortilla over mixture. Roll tortilla very tight, then pierce with a toothpick to hold together. Repeat with remaining ingredients until you have five eggrolls.

Arrange eggrolls on a plate, cover plate with plastic wrap and freeze for at least 4 hours or overnight.

While eggrolls freeze prepare avocado-ranch dipping sauce by combining all of ingredients in a small bowl.

Preheat 4-6 cups of oil to 375 degrees.

Deep fry eggrolls in hot oil for 12-15 minutes and remove to paper towels or a rack to drain for about 2 minutes. Slice each eggroll diagonally lengthwise and arrange on a plate around a small bowl of dipping sauce.

Garnish dipping sauce with chopped tomato and onion.

Whatever happened to pizza, chicken nuggets, cheeseburgers, Doritos, and beer?  Serve all those, plaster the game on a 50" big screen and watch the game (and commercials) in HD...it's the American way!

Thai Chicken Satay

1 pound boneless skinless chicken breast halves
1/3 cup soy sauce
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 teaspoon grated gingerroot
3/4 teaspoon red pepper flakes
2 tablespoons water
3/4 cup canned unsweetened coconut milk
1 tablespoon creamy peanut butter
½ teaspoon red pepper flakes (optional)
4 green onions with tops, cut into 1-inch pieces

1. Cut chicken crosswise into 3/8-inch-wide strips; place in shallow glass dish.
2. Combine soy sauce, lime juice, garlic, ginger and red pepper flakes in small bowl. Reserve 3 tablespoons mixture; cover and refrigerate. Add water to remaining mixture. Pour over chicken; toss to coat well. Cover; marinate in refrigerator at least 30 minutes or up to 2 hours, stirring mixture occasionally.
3. Soak 8 (10- to 12-inch) bamboo skewers 20 minutes in cold water to prevent them from burning; drain. Preheat grill.
4. Meanwhile, for peanut sauce, combine coconut milk, 3 tablespoons reserved soy sauce mixture, ½ teaspoon red pepper flakes (optional) and peanut butter in small saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and simmer, uncovered, 2 to 4 minutes or until sauce thickens. Keep warm.
5. Drain chicken; reserve marinade. Weave 3 to 4 chicken strips accordion-style onto each skewer, alternating with green onion pieces. Brush chicken and onions with reserved marinade. Discard remaining marinade.
6. Place skewers on grill. Grill skewers on uncovered grill over medium-hot coals 6 to 8 minutes or until chicken is no longer pink, turning halfway through grilling time. Serve with warm peanut sauce for dipping.

Puppy Chow

1 12 oz box Crispix cereal
2 cups semi-sweet chocolate chips
1 cup peanut butter
5 tbsp. butter
1 tsp. vanilla
1 lb. pkg. powdered sugar

1. Pour out cereal into large bowl and set aside. 2. In 1-qt. saucepan, heat chocolate chips, peanut butter and butter over low heat, stirring frequently until melted. Remove from heat; stir in vanilla. Pour mixture slowly over cereal while stirring with a spatula to evenly coat. Pour into a 2-gallon resealable plastic storage bag or grocery bag. Add powdered sugar slowly. Shake until well coated. Spread onto wax paper to cool. Store in airtight container in refrigerator.

Cream Cheese Log

2 packages of cream cheese
1 small chopped onion
1/2 can chopped black olives
1 jar dried beef

grind up dried beef set asside
mix softened cream cheese and onion and olives form (football shape for the big game)
place on a plate. put the ground up dried beef on entire form. chill 1-2 hours . serve on Ritz crackers.

No buffalo chicken dip?  We usually have it because everyone in my family loves it.

  • 2 boneless chicken breasts (thin boneless breast fillets also work well)
  • 2 (8 ounce) packages cream cheese, softened (I use 2 containers of the whipped cream cheese)
  • 1 cup Ranch dressing *
  • 3/4 cup pepper sauce!!
  • 1 1/2 cups shredded Cheddar cheese
  • Cook chicken on stove top, cut into small pieces, place in skillet, add hot sauce.  Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese.  Place mixture in a slow cooker or bake in oven.  Top with remaining cheese bake on low until cheese is melted and dip is bubbly
  • .  Serve with celery sticks and crackers/tortilla chips.
*Some people prefer blue cheese dressing instead of ranch

  • 2 (8 ounce) packages cream cheese, softened
  • 1 (15 ounce) can chili without beans
  • 16 ounces shredded Cheddar cheese
  1. Spread cream cheese on the bottom of a microwave-safe dish. Spread a layer of chili over the cream cheese. Finish with a layer of shredded cheddar cheese. Microwave for 5 minutes or until the cheese melts.

We usually just do the whole meat in barbecue sauce thing. 
1 bag Italian meatballs
2 pkgs Cocktail Weenies  (heeheehee, I said weenie)
1 or 2 bottles of BBQ sauce (the one with honey tastes best)

Put the meatballs in the oven and cook them, and get a LOT of the oil off of them.  Cook the cocktail weenies stove top, and get a lil color on them.  Throw them all into a big pot like youd boil potatoes in, and cover with 1 bottle of bbq sauce.  After its got all bubbly and steamy, add the 2nd bottle or dont.  It depends on how saucy you want it.  Its preferable to make it the day before, and stash it in the fridge to pick the rest of the grease off easily, but if you dont care, leave it on low or on something that will keep it hottish-warm and let everyone serve themselves. 

Get some Parker House rolls or something from the freezer section, and use that for a dipping type thing for the remainder of the sauce in the bowls and ooooomg.  Happy foodgasm inducing food!

Katy, that sounds good! One question though, when you say "pepper sauce" are you talking about a hot wing sauce or something along the lines of Frank's Red Hot?

just throw some ribs on the smoker for about 2-3 hours with some hickory and cherry woods, then toss on some chicken on the other shelf.  Throw some wings in the oven on a couple of cookie sheets, for about 35-40 minutes 350 turn once

sauce for the chicken wings, melt a stick or two of butter, add some garlic, red pepper flakes, papricka, dry mustard, some chicken seasoning, some more garlic, evoo, dry white wine, white pepper and some hot peppers.  bring to a boil, and reduce; then toss the chicken wings in when they are done.  Or add your favorite hot sauce to the melted butter

Fill cooler with beer and relax, who wants to spend all their time cooking

Oh I make this.  It's one of my absolute favorites and everyone loves it.

kyttyn I love meatballs. I won't go to a wedding if they do not have meatballs.(truth).
There is a local grocery store that has incredible wings in their deli. I munch a bag of them when I go shopping there. For the supper Bowl I will make homemade chili. For snacks potato chips with sour cream and onion soup mix for a dip. Lots of Pistachios, smoked almond and cashew nuts. Of course ice cold beer.
