Does anyone know if there is a way, to remove a user from subscribing to journal entries?

No.  You cannot control the activities of someone else.  But if you put their profile on "hidden", then they should stop showing up on your list (if that list is like all the other features), but they STILL will be subscribed.

Hmm, would blocking them block them from your journal as well?

I don't see why it would.  It only blocks them from contacting you, it doesn't block them from seeing you, viewing your profile, your pictures, etc.
