I couldnt find the old dinner (non-crockpottery) thread so decided to put this in P&ORS.
 
I used this recipe and turned out some awesome

corn on the cob

Salad, couscous, BBQ meat, ice cream cones (but only when in real danger of being stolen by seagulls)...

One thing that's guaranteed to bring back happy memories of summer and vacations for me is the smell and taste of freshly cooked, manually sugared ring donuts. There was a little store that made 'em in the town my dad used to take us every summer for years when I was little. Every time I come across fresh ring donuts now, I'm transported back there.

On the offchance it might ring a bell with someone, I'm talking Harlech in the late 70's, early 80's...

We grilled some cod fillets this weekend that I had marinated in lime juice and spices and then we made fish tacos out of the meat..Yummy!

Fresh gazpacho.... chopped tomatoes, cucumbers, onions, bell peppers marinated in V-8 juice, olive oil, plenty of garlic and topped with fresh cilantro and sliced avocados. Since it's never cooked but sits in the fridge, it's fabulous for no-cooking hot summer days and goes down so well!

(And it's extremely healthy - I just never tell anyone that part.)  [:)]

TOMATO SANDWICHES!!!!!!! i wait ALL year for the local tomatos to come in....YUMMMMMM If i'm feeling really randy i will put a slice of cheese on it.[:D]

[:D]  Come on up but as of today, you need a passport to get across the border. Just give me a few days notice since it tastes best when it sits over night.....

Homemade ice cream has always been one of my summer faves, along with fresh tomato salad.  (uhhh..not on the ice cream, thought I should clarify) [8D]

sounds like you've just created the alcohol-free version of the mojito - my tastebuds decided I have to try this

Gazpacho is my favorite summer soup along with jersey tomatoes on anything or just a big bowl of them cut up with basil, fresh mozz and olive oil.
Chilled watermelon with kosher salt.
