It is my Dom's b-day in a few days. His favorite food of all time is his mother's Shephards Pie.
Now, mom passed away about 13 year's ago now. Somebody had the recipe because his ex used to make it now and then. Although when we ask now, nobody has it. Before anyone comments, no we cannot get it from the ex. She gave it to us already. He knows it had corn and ground beef in it. The one she gave us had neither.
If you look in cookbook's or on the net every recipe you find will be made differently.

So, this is what I know. It has ground beef and corn in it. With mashed potatoes on top.

Anybody have a recipe where the missing ingredients may come into play? I know my odds are slim to null but it's worth a try anyway.

Sounds like an irish style shepards pie, Euro style normally is more often with peas rather than corn, especially with grounding the corn beef and probably a nice lean ground beef together into a meat base.

i've not yet tried making shepherd's pie but had thought about it at one time (so thanks for reminding me about it so i can try something new!). The shepherd's pies that i'd heard of previously contained ground beef, corn & mashed potatoes. Here's a recipe that i found online that seems to match descriptions of what i've heard before. If this one doesn't sound satisfactory there are links to different recipes within this site.

If you can't find a good irish shepards pie, drop me a line and I'll jot down some basic directions. Really isn't too hard though.

1 to 2 lbs. lean hamburger meat or ground meat of your choice, cooked and drained

1- envelope of onion/onion mushroom/beefy onion, or some other type of dry onion soup mix

1- 10 oz can Mushroom soup (do not dilute)

1- 15 oz can corn, (drained) or any kind of left over vegetables
6 med. potatoes, peeled and cut up and boiled to soft stage

1/2 lb your favorite type of cheese grated or sliced

Heat everthing in a large skillet . When potatoes are done whip with butter and milk. Top with your favorite cheese Bake in a 350 degree oven for 15 to 20 minutes or until hot through and cheese has melted.

ACK!!! mushroom soup and cheese...in a shepards pie? Dear god darlin where did that come from? Outside of maybe Feta what Shepards do you know of that have mushrooms or cheese availabe to them?

I'll send you a more detailed recipe in response to your email but it's really basic, about 1/2 lb ground beef, 1/4 ground corned beef, frozen corn kernels, and then Mashed potatoes (Real not instant! and sort of chunkier rather than smooth) with butter, salt, black pepper (or black and white for more kick), to taste add things like nutmeg, sage, paprika, garlic. Put it in that order, at about 400 till top is glazed with brown and you are good. Some people add Sauted onions to the beef to a beef stock gravy sauce and you are good. There are a few variations depending upon whether you want it more spiced or more bland.

Not to rush you or anything, but Saturday is Doug's birthday. We have a whole houseful of people coming over...for shephards pie.

I'm also going to try LadyShoshin's as well. Just not for the birthday. I know the pie doesn't have cheese in it I'm trying to re-create. I won't knock it until I've tried it though.

I looked through my cookbooks but couldnt find anything with corn in it so I looked on www.FoodTv.com

Here are the recipes that have corn, though from the ingredients it seems pretty basic and I see no reason why you couldnt take any old recipe really and add corn or play with it.

If you dont like any of these recipes I would also suggest www.allrecipes.com and www.recipesource.com

4 tablespoons olive oil
3 onions finely chopped
3 garlic cloves finely chopped
2 pounds freshly ground lamb
1 (24-ounce) can tomato sauce
1/2 pound butter
1/2 cup flour
1 cup burgundy wine
4 tablespoons lamb base
2 cups water
Salt and pepper, to taste
2 teaspoons tarragon
2 cups yellow corn, cooked
1 cup green peas, cooked
1 cup carrots, diced, cooked
4 pounds potatoes (with skin), boiled
1/2 gallon milk
1/2 pound grated Parmesan cheese

Heat oil in a large frying pan over low heat, then add onions and garlic. Cook until soft, turn up heat and add the fresh lamb meat. Stir until well browned. Drain off fat and add the tomato sauce.
Make flour sauce: In saucepan cook 1/4 cup butter, add flour, stir and cook for a minute, then add burgundy wine, lamb base, and water. Season with salt, pepper, and tarragon. Simmer gently for 15 minutes, and then add yellow corn and green peas and carrots.

Mash the potatoes, and then add 1/4 pound butter and milk, season with salt and pepper. Put meat mixture in individual 8-ounce dishes with approximately even portions and top with mashed potatoes. Spread Parmesan cheese on top of each dish and put in a preheated 350 degree oven and brown until a golden brown color. Serve with seasonal vegetables.

2 1/2 pounds ground beef
1 green pepper, diced
1/2 cup corn kernels
1 onion, diced
1 small can diced roasted red peppers
2 tablespoons steak seasoning
1 tablespoon water
2 diced tomatoes
4 cups mashed potatoes
1 cup grated Cheddar

Preheat the oven to 350 degrees F.
Cook ground beef until well done. Strain to remove grease. Saute the green pepper, corn, onion, roasted peppers, and steak seasoning in butter until tender. Strain off any excess butter. Mix with the ground beef and add tomatoes. Layer this mixture in bottom of baking dish. Cover with warm mashed potatoes. Top with cheddar cheese. Bake until the cheese melts.

2 tablespoons olive oil
2 cups chopped onions
Salt
Freshly ground pepper
2 pounds roasted lamb loin or leg, medium rare
3 tablespoons flour
1 tablespoon tomato paste
1/4 cup dry red wine
2 1/2 cups veal stock reduction
1/2 teaspoon dried thyme
1/2 cup sweet corn, cooked
1/2 cup sweet peas, cooked
1/2 cup small diced carrots, cooked
1 recipe Mashed Potatoes
2 tablespoons butter, cubed
Chopped parsley, for garnish

In a large saute pan, over medium heat, add the oil. When the oil is hot, add the onions. Season with salt and pepper. Saute for 2 minutes. Finely chop the lamb. Add the lamb to the onions and saute for 1 minute. Dust the lamb with the flour and cook 2 minutes, stirring constantly. Stir in the tomato paste and cook for 30 seconds. Stir in the red wine and the veal reduction. Bring the liquid to a boil. Stir in the thyme, corn, peas and carrots. Season with salt and pepper. Reduce the heat to medium low and simmer for 10 minutes. Pour the mixture into a deep 9-inch oval dish. Place spoonfuls of the potatoes over the meat mixture. Dot the top of the potatoes with butter. Place in the oven and cook for about 30 minutes or until the potatoes are golden. Place a baking sheet under the dish in case the pie starts to bubble over. Remove from the oven and spoon onto serving plates. Garnish with parsley

I'd like to thank everyone for trying to help me with the pie. I'm still going to try some of the recipes. For no other reason than I love to experiment. There is never a dull food moment when you are with me. Plus, you never know one or 3 of them may end up being a favorite recipe.

Anyway an Aunt helped me out. Yep, I was asking the world to help me with the pie recipe. It is unbelievably simple as well. Too simple for me. I've never been a fan of one-pot meals but hey...its quite tasty. So I figured I'd share it with all of you.

Mashed potatoes. Old or new. As long as you can slather them on top of your concoction in the end.

Ground beef.
Can of tomato soup.
Corn.

Fry the beef, add the soup and the corn. Put the potatoes on top and cook it in the oven until there are some brownish peaks on the potatoes.

However, as I said I don’t do things this easy.

So my pie went as follows.

Ground Beef (turkey next time to see if there is a definable difference)
Corn
Carrots
Green Beans
Onion

The potatoes on the top. I steamed all of my veggies but I guess it wouldn’t matter if you used canned.
I also used the ready prepared soup instead of the condensed. Something I will experiment with as well in the future Shepherds Pies.

Since everything was already cooked I put it on 350 until I saw the potatoes starting to brown.

That's pretty much my recipe. I always put an egg in the mashed potatoes - it helps with the peaking and browning. Strictly a presentation thing.

Sometimes I mix ground beef and ground pork or ground chicken or Italian sausage meat - they're great combinations and work well in meat sauce for spaghetti and chili too.

Old Fashioned shepards Pie
Peel and cut 5 lbs of potatoes and put them on the stove to boil...

1lb of ground beef and one meduim onion diced
Brown these with salt and pepper to taste and set aside.

mash the potatoes up nice and creamy

in any baking dish ( i use a cast iron skillet)
put the ground beef on the bottom of the pan to cover.

2 cans of your favorite creamed corn, pour those over the beef. ( like layering over the beef)

put the potatoes on top of that like a pie crust heap them on!!!!
put in a 350' oven for 30 min, cool 10 minutes and serve with your favorite italian bread.

I have used similar recipes to the ones listed, but I would add...

Brown your meat in olive oil and some nutmeg.
