My observation is that generally there has been a de-evolution of the usage of sir and ma’am.  Certainly there are geographical areas where it is used generically, ostensibly to show respect for one’s elders. However, in this day and age, informality seems to be the rule rather than the exception. Personally, I seldom use either (sir or ma’am) except in jest or as an attempt at sarcasm.
