After cleaning him out we have a whole bowl of the pulp and I'd like to cook something out of it if possible.

Do you mean the flesh or the stringy bits that hold the seeds? Seeds can be roasted. Pulp should be cooked soft and used as a vegetable or for pumpkin bread or pie or muffins. Strings should be tossed.

However pumpkins that are good for carving and sold for that purpose are not as good tasting as a sweet pumpkin or pie pumpkin. If they have bins of pumpkins, the bin with the big pumpkins are not designed for eating, the bins of the smaller ones usually are pie pumpkins.

About pumpkin recipes, I find that most are too heavily spiced for my liking. I use no more than one teaspoon cinnamon and I add some vanilla for sweetness. I don't use commercial pumpkin pie spice.

Jack-o-lantern pumpkins are edible, they just aren't as sweet as smaller, "pie pumpkins".

The stringy pulp that holds the seeds.

And yeah, I know they won't be as sweet and yummy as say sugar pumpkins which are meant for eating, but I thought it'd be worth a try.

Pumpkin soup is awesome.  Puree the pumpkin pulp, add chicken broth, curry powder,  green onions, green pepper, salt, garlic, cayenne pepper and half and half. You may also add cut up chicken or any other veggies you wish.  Great soup!

HAHA you just had to go there.

What he didn't tell you is that it's probably just as slimy.
