Freud and Kraft-Ebbing especially did a lot of work on fetish but i wonder if we shouldn't disregard that work as very, very old stuff and keep them out of this convo. I dislike the term hardwired once we get past the genetiic imperative for sex. I suspect from my own experience that sexual style may be eroticised in prepubescence, i.e. dominance, submissiveness, homo/hetero sexuality,etc. I find that style is constantly in flux, however. And this or that may be reinforced by masturbation and experience. Maybe object fetish and X-dressing are also eroticized early on.

Feel the need to say something about the influence of hormones at different lifestages but don't have any supporting data, other than they rise and wane.

Is it unhealthy, dangerous, etc to have a single-minded fetish? Only if you are lonely, i would guess. Everything else seems judgmental.

The interesting thing about that one is that they call something that monomaniac paraphillia rather than a fetish now

Thank you for acknowledging. John Money, if we can believe the documentary currently in circulation, was a monstrous and arrogant pig masquerading as a psychiatrist. His "experimental victim" David Reimer committed suicide. Just stating this for the benefit of any casual reader who comes along and wonders what the fu*k i am talking about. Not meant to be any further judgment on your use of his quote.
