because they are ephemeral, and mystical ( appear solid but aren't), and you can't walk up to one, and the leprecarn keeps his gold at the base of one - and just try to find the end of the rainbow!!!!

and they are more interesting than singing about cemetaries and dying and incontinence and pain and fear.

I actually only know two songs on this topic. One is sung by a frog and you are quoting it. The other one also talks about blue birds.

There's also a band called Rainbow.  Or at least there was.   Ronnie James Dio was the singer for that for a while.  And he allegedly plays D&D.

No, he wasn't. Rainbow was the first group I ever saw in concert; good show, except when his guitar string kept breaking, and he about pitched a fit.
