Hi all,

I am curious what some favorite cookie recipes and treats recipes or candy recipes are for the Holidays that you may or would use in like a cookie exchange type idea.  I know i can search the internet and i have 4 books just on cookies and treats for holidays but i would rather hear about some tried and trues.

I am trying to keep costs down this year by poisoning erm gifting  many of my people (i.e., co-workers, boss, mailman, receptionist, apt managment and maintenance people, neighbors and friends etc with a pretty serving plates and then candy and cookies as gifts.  They say this is a cost effective way to show you are thinking about people.

I have jelly cupcakes but i haven't made them in a long time and i will be doing it from memory so i will post it after i make them again to make sure my memory is accurate.

These have always been a hit from office parties, to classroom parties, to cookie exchanges to sending overseas, to family gatherings, to neighborhood parties, etc. you can make traditional candy cane shapes or wreaths. i am not baking this year as i am dieting and it would just be too much temptation, but have had people calling me asking where their cookies are.

While both of these are -very- paleo-friendly, they're also a holiday tradition -- enjoy!

Macaroons
---------
7-ounce shredded unsweetened coconut (2 2/3 cups)
1 cup sliced raw almonds
1/4 cup raw honey
4 large egg whites

1. Preheat oven to 325 degrees F. Grease 2 large cookie sheets. Into
large bowl, measure coconut, almonds, and honey. With spoon, mix until
combined. Stir in egg whites until well blended.
2. Drop mixture by heaping tablespoons, about 2 inches apart, on cookie
sheets. Place cookie sheets on 2 oven racks. Bake cookies 20 to 25 minutes
until golden, rotating cookie sheets between upper and lower racks halfway
through baking time. With pancake turner, remove cookies to wire racks to
cool completely. Store cookies in tightly covered container.
Yields: About 1 1/2 dozen



Almond Macaroons
----------------
1-1/4 cups almonds
1/8 teaspoon cinnamon
2 tablespoons grated lemon peel
2 egg whites, beaten
1/4 cup raw honey
2 tablespoons lemon juice

Grind almonds coarsely. Combine cinnamon and lemon and add. Beat egg
whites very stiff, fold in honey and continue beating. Fold in lemon
juice with almond mixture and blend. Drop from a teaspoon onto ungreased
parchment paper. Bake 30 minutes at 250 degrees F. Remove from paper
while still slightly warm. Makes 30 macaroons.

Milk chocolate biscotti to die for. I'm not allowed in my sister's house without a batch of these. She conned two batches out of me for Thanksgiving.  Absolutely the best ever, and you can dip one end in chocolate for extra luxury.

Thanks Ladies, i appreciate your recipes. I always get so overwelmed with recipes lol but as my friend said -- just follow it and you will be fine!

I'm making up a batch of brown sugar shortbread tonight.  I discovered I forgot to buy powdered sugar, so I can't make pecan puffs, and I want fresh cinnamon/ginger/nutmeg for the cinnamon triangles.

I love this recipe, and best of all, no baking involved:

Peanut Butter and Chocolate Balls

1/2 cup butter, melted
2 cups cornflakes, crushed
2 cups creamy peanut butter
2 cups dry milk
2 cups powdered sugar
15 oz. semisweet chocolate

Line a cookie sheet with foil.  Combine cereal, peanut butter, dry milk and powdered sugar in a large bowl.  Mix in butter.  Roll into 1 tbsp balls and place on cookie sheet.  Chill overnight (important!)

Melt chocolate either in the microwave or in a double boiler.  Using a fork, dip balls one at a time and transfer back to cookie sheet.  Refrigerate until firm.  Store in an airtight container in the refrigerator.

If you love peanut butter and chocolate, another great recipe is Muddy Buddies/Monkey Munch.  You can mix it up and then portion out into clear cellophane bags and make all pretty with ribbon and tags.
