I am not a vegetarian but love this one...I hope you do too....The tofu tends to stick like crazy so use you most non-stick pan...but it is really yummy!

Bean salad! I like to take a handful of kidney or garbanzo beans (or both), add a little chopped onion, some fresh rosemary, some pasta, extra virgin olive oil, avocado, tomato, olives, and a few capers, stir it all up and let it chill covered for about an hour.

I also really like to add small red beans to pasta sauce (along with onion and green bell pepper sauteed with olive oil, Italian seasoning, and maybe a bay leaf or two) -- I grew up on mushroom Prego with added pork sausage, and the red beans are an excellent veg*an substitute (although I don't use Prego so much anymore because Newman's Own is slightly cheaper at the co-op where I shop, and I hear Prego may frequently have non-vegetarian ingredients snuck in).

Someone mentioned Laurel's Kitchen - great book.
When my daughter was little we use to do spaghetti squash with sauce, she never missed the noodles and had extra vegies.

Tofu Tacos
1 pkg firm tofu
1 pkg taco seasoning
1 can Ro-tel tomatoes, HOT!
1 can black beans 2 eggs
1 T olive oil
Tortillas

In your iron skillet, brown the tofu in the olive oil. Add the seasoning, then add the Ro-tel, eggs, and beans. spoon onto tortillas and add cheese, if you're not vegan. These are so fucking good!

Saffron rice

Jasmine aromatic rice
Saffron - just a pinch
it's good. Add some veggies, if you like, it's pretty much a make it up as you go along idea, but very yummy.

Curry rice
Jasmine aromatic rice
Curry
Coriander seeds
frozen veggies
mix it up.

Doesn't Boca also make crumbles?  They are vegan.  I suppose if they don't make crumbles, you can thaw and crumble up the vegan Boca burgers.

[/link]Red Lentil Dahl with Spinach and Curried Yogurt Serves 2 (adapted from a recipe by the Post-Punk Kitchen)
1 tablespoon ghee
1 small yellow onion, chopped
1 1/2 teaspoons fresh ginger, grated
2 garlic cloves, minced
1 cup fresh spinach, chopped
1 teaspoon sea salt
1/2 cup dried red lentils, rinsed and picked over
1 tablespoon tomato paste

2 plum tomatoes, chopped
juice of 1/2 lime
1/4 cup fresh cilantro, chopped 1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
1 teaspoon coriander seeds
1/2 teaspoon cumin seeds
3 whole cloves
1/2 teaspoon hulled cardomom
1 teaspoon turmeric
1/2 teaspoon black pepper
2 dried red chiles, seeded
1/4 cup plain yogurt
1 teaspoon good curry powder

Toast whole spices in a dry skillet over medium heat, shaking often until fragrant, about 5 minutes.  Transfer to a spice grinder and pulse with chiles.  Set aside. Heat ghee in a heavy skillet over medium heat and fry onions until golden.  Add tomatoes and cook until most of the liquid has evaporated.  Add ginger, garlic, turmeric, black pepper and toasted spices and fry 5 minutes. Add vegetable stock and lentils and bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes.  Add spinach and cook 3 minutes, then add lime and cilantro, adjusting consistency with tomato paste if necessary. Serve over brown basmati and top with a dollop of curried yogurt.

I'm curious, afterforever, if you have tasted the Veggeroni (Seitan Pepperoni). I love the taste of pepperoni but it's too full of grease and fat. So, I have been eating Turkey Pepperoni for years and love it. I have never tried a vegetarian "pepperoni" and just read about this one on the site you recommended. I'd be really curious to know how it tastes. Thanks.........luci

This is one I found on allrecipes.com one time when a friend of mine had a population explosion of eggplants and tomatoes in her garden.  Id strongly suggest looking at allrecipes.com for ideas, they have tons of user submitted stuff on there.

They call them Eggplant and Tomato Packets. The best thing about this recpe is its made for 2 servings, which is one eggplant. You cant get much simpler for scaling than that. And, it rewarms decently, but not great, and better in the toaster oven than the microwave.
Ingredients
    1 eggplant, peeled and halved lengthwise
    1 tomato, halved
    1 pinch garlic salt ground black pepper to taste
    2 teaspoons olive oil
    2 sheets heavy duty aluminum foil
Directions
  1. Preheat an outdoor grill for medium heat.(works in an oven as well at around 250)
  2. Place one eggplant half and one tomato half on each sheet of aluminum foil. Sprinkle with garlic salt and black pepper. Drizzle with the olive oil. Fold the foil up to form packets.
  3. Grill the packets until the eggplant and tomato are very tender, about 15 minutes.
