What exactly is "queening"? 

I see it as an interest on here and it means to me the act of pushing your chess pawn to the last rank and turning it into a queen.

Or perhaps the verbification of a noun meaning an old, pretentious gay man.  Or a woman who has inherited a massive fortune upon which she pays no taxes and in fact receives considerable government assistance and stipend, in return for going around performing officious official duties and opening up her family's private life to her "subjects" and even the entire world.

I am pretty sure I'm not interested in it, but I am curious as to what it is.

Thank You so much for such a rousing and passionate description from the Dominant Woman's perspective.  For what my humble opinion is worth, and from the opposite side of the equation, the exchange of power through this act is highly intoxicating and addictive.  While my personal preference leans towards being used in the latter manner You have so eloquently described, the fact that the choice is not mine just adds to the allure and reality of how totally in control the Woman truly is.
