We are saving elk for winter. We can substitute it for the beef in beef stroganoff. You can have elk stroganoff. Winter's menu has yet to come out, but You can preview it in my journal, if You want.

Elk Wellington?
Elk kebab? That would probably be good. We can try to get some elk in next week to replace the lamb in the kebabs.

WINTER MENU

Dinner Five Course $25

1. FLATBREAD: roasted garlic, dried fruit chutney, campazola cheese

2. SALAD
*** beet salad, green bean, garbanzo, egg, 1000 island
*** curried celery root slaw, apple, golden raisin
*** brussel sprout salad, hot bacon vinaigrette
*** buckwheat crepe, pork rillete
*** house made tofu, white truffles

3. APPETIZER
*** foil roasted mushrooms, lemon
*** potato cake, horseradish cream
*** root vegetable tempura, ponzu sauce
*** cauliflower puree, raisin, olive, pepita, pomegranate
*** kale soup (vegetarian or chicken/chorizo base)

4. MAIN
*** cheese fondue, bread, vegetables
*** waffle, lobster scrambled eggs
*** porcini picatta, spaghetti
*** duck sausage, mashed potatoes, braised cabbage
*** elk stroganoff

5. DESSERT
*** hot chocolate soup, churros
*** pineapple upside down cake
*** cookie plate, cheese plate, or fruit plate
*** sticky toffee pudding
*** rum baba, rum, whipped cream

*** wild mushroom broth, rice noodles noodles, tofu
*** chicken creast, cauliflower infused mashed potatoes, pomegranate-olive relish

*** yeast risen walnut cake
*** bananas foster

This weekend I made a turkey breast in the crock pot with liquid smoke. Nine hours on low from frozen. The meat fell off the bone...

How about lemongrass-hibiscus vinaigrette? i don't know. i got the idea from Peet's hibiscus tea. It has orange, lemongrass, hibiscus, cinnamon. It's not a dish i've actually made, but i have seen hibiscus water served as a sauce for fish. You could probably make a vinaigrette by the same principals. But it might be too kooky...

i wanted an orange salad. How about orange salad with fennel and pomegranate, with citrus vinaigrette? Is that better?

You can have your choice of espressos in the cappuccino. i recommend the single origen Ethiopia Sidamo, but we also have an espresso blend.
The sidamo is sweet and floral, with notes of blueberry and chocolate. The blended espresso is more balanced, with caramel, chocolate, and nut tones. Would you like some potatoes with your crab benedict? Or maybe a cup of fruit, or some sliced tomatoes? We have fresh squeesed orange juice...

The Sidamo sounds wonderful and sliced tomatoes would be perfect... Any chance of a little guava juice blended with the oj?

Oh, dear. We do not have any guava juice in house, but i can order some. Sorry. We can probably have it in by tomorrow. Is that guava nectar stuff okay? i don't know if i can get fresh guavas. Randomly, have you ever had a pineapple guava? It's this really bizarre flavor, like a cross between a regular guava, mint, and eucalyptus. i don't know if i like them, but they're definitely interesting.

Y'all are making me hungry.  I wish I could have a meal like I used to get from a favorite restaurant in California.  I'd be sitting with my coffee, enjoying the smell, when warm rolls and butter were brought.  Then some salad, shrimp cocktail, my steak and potato and mixed veggies or whatever, then a slice of pie.  Mmm, having each plate removed as the next was brought, not just slapped in front of me en masse by a bubble gum chewing waitress who talks out of her nose, with me waiting for an hour for a refill on my drink...

I prefer to usually eat at home now, or at a buffet, unless I get an excellent waiter or waitress who understands that service can make or break a meal.  There was an excellent waiter at the Applebees here in Bluefield...I wish he were the standard, not the exception.

I need to make a New York style cheesecake marbled with Smuckers seedless black raspberry jam soon...it's been a long time.  Next time I'm in Beckley, I'll have to check out the restaurants.

Sunny meant that she read jb's post for "crab" as "crap"... not that the menu was crap, her eyes got confused is all.

When I said you're putting "hibiscus" in the the food...  I meant what I said - "Hibbie" (LadyHibiscus), not the actual plant.

You haven't been posting here long, so it's hard to know that we don't always read what's posted as it's spelled, and we are "mock-scared" of our friends being pureed and put into a salad.

(it's berry hard to explain the jokes sometimes... they just lose their funny)
