Have any of you had an online sub if so can you help me? what are the kinds of things that you have them do? or anything a long that line.

If you do a search using the keywords "tasks" and "assignments" you'll find lots of threads with information. You can tweak the tasks to fit your tastes. I also suggest picking up a copy of the Miss Abernathy Omnibus and using the exercises in the "Training With Miss Abernathy" section. These resources will get you started.
