The local "faggot cook" joins the meatloaf brigade..... trying to think how to do that...... Let's see.... do we deconstruct it? Nah.... nobody, and I mean nobody would "get" it.
Let's go with lo-cal, exotic!
Instead of ground beef (at 80%, probably) use ground buffalo and equal ground veal (or turkey for you whiners.) Buffalo might be more available out here in Colorado, since some of the first commercial ranches were here. But, hey! This is our Holly we're talking about!
Buffalo and veal/turkey are going to be WAAAaaay leaner than most beef..... so, we'll use extra fat in the guise of olive oil.... so, sautee onions and garlic in a little OO. When nice color, take OFF heat, add panko bread crumbs and two - maybe three eggs since we need binding. (pun intended, but only for perverted cooks.)
Next, a "cheat" - small can of stewed tomatoes, Italian style. Dump in a small bowl and cut-up the slices.... we want chopped. Okay, if dough is too loose, more panko. Mamma would add 1/2 can of 6 oz. tomato paste, so we will, too. Should have an almost dough consistency, but a little looser.
Spices??? I think a nice blend of Italian.... http://www.fbtef.com/index_files/Page2148.htm Maybe an extra shot of Thyme, but not too much extra. LOL! A little sea-salt. Salt is an enhancer. Dough should NOT taste salty. Remember, you got salt from the canned cheats and from panko. Maybe NO additional salt. Oh, yeah... you got sugar from both cans.... maybe a shot of vinegar.... oops, now too loose... LOL! panko to fix. Black pepper to taste. Now the two ground meats.
Pack into your BUTTERED loaf pan - probably two pans at this point - lol.... Make a deep cut, long way and put in rest of tomato paste. Pre-heated oven at 350 for 45 mins.
Seriously, folks. 2 lbs meat, 2 eggs, 2 cups bread crumbs, 3/4 cup liquid (from stewed tomatoes - please measure!) 1 chopped onion (not sauteed.) You can make your own bread crumbs... toast and a Baggie and a rolling pin.
Wild variation (in cook book) Use buttered muffin tin - 400 for 25 minutes. Yumm..... I think I'll try muffins! Mashed potatoes, also in muffin tins. Let's see.... maybe Chantilly Potatoes - mashed with a topping of Swiss cheese and heavy cream. Parsley atop.....
Fresh carrots al' dente. And, then at last moment, frozen green peas and onions.
Damn Not even lunch time yet... (8:50 AM, Local) and my mouth is "at" dinner..... LOL!
