I make Mexican rice by putting oil (enough to cover the bottom) in my large saucepan, add 1/2 cinnamon stick, and 3 cloves. Cook until cinnamon starts to unwind and it smells good. Remove spices, then add rice, chopped onion and minced garlic to the pan. Cook, covered, until rice is turning golden, then add chicken broth and cook until almost done. About 5 min before rice will be done, you can put some frozen green peas on the top, cover the pan and finish cooking. You can also add some canned or chopped tomatoes at the beginning, but if you add the canned ones, don't put as much stock as you would otherwise. Lance is correct about the stock, but I use the bones and anything left after I finish the rotisserie chicken that I buy already cooked at the grocery cause I don't like having the oven on in the summer. I freeze the bones until I am ready to make stock.
