Brother, you can't be serious! Mayo? OK, maybe in some sort of rice salad. Someone else would need to handle the cumin shaker, I usually put too much in. And I grind it from seed, it's more pungent that way. Cumin's one of my favorite spices.

I occasionally make Tomatillo rice, woth roasted tomatillos, roasted garlic, cilantro, roasted minced Serranos, and a bit of lime.

One of my flatmates last year used to always add turmeric while the water was boiling. if he was making a curry. It made the rice golden.

i make brown rice in a Teflon skillet with 2 cups of chicken stock per one cup of rice. Then i add a chunky type of salsa (drained through a slotted spoon). Fast and easy.

Dice onion and garlic, brown in a pad of butter. Fill up with chicken stock and ad curry powder. Cook rice in this.

Dice onions and garlic. Brown in some butter with a tad oil added. Add the raw rice, stir till the rice gets translucent. Fill up with chicken broth and add diced tomatoes, dices bell peppers, hot peppers, corn, red beans. Season with cumin, cayenne, hungarian paprika, oregano. Cook till the rice is done, adding broth if needed.

Risotto in many, many varieties! I love one with green peas, asparagus, morels and Parmesan.

Since we're not worrying ourselves sick about our rickety old hearts, my favorite is brown rice with honey and heavy cream. ooooohhh yummmy.

Lance I don't mind if we all talk about healthier options, I just didn't want comments like you know rice isn't good for you, or comments about the sour cream and garlic being bad for you, I actually like the tips on how to make your own an do it right, I just don't want it to turn into a well aren't you supposed to be doing........... and............ isn't doing that and isn't healthy.

Lance, I quit making home made chicken broth when I moved out of Manhattan. Nobody up here carries a real soup hen and those fryer pieces don't have enough flavor for me.

I could raise my own chickens and then when they stopped laying I would have an old hen, but I don't want to have to butcher them myself.

I make Mexican rice by putting oil (enough to cover the bottom) in my large saucepan, add 1/2 cinnamon stick, and 3 cloves. Cook until cinnamon starts to unwind and it smells good. Remove spices, then add rice, chopped onion and minced garlic to the pan. Cook, covered, until rice is turning golden, then add chicken broth and cook until almost done. About 5 min before rice will be done, you can put some frozen green peas on the top, cover the pan and finish cooking. You can also add some canned or chopped tomatoes at the beginning, but if you add the canned ones, don't put as much stock as you would otherwise.

Lance is correct about the stock, but I use the bones and anything left after I finish the rotisserie chicken that I buy already cooked at the grocery cause I don't like having the oven on in the summer. I freeze the bones until I am ready to make stock.

I like long grain wild rice with raisins, a bit of whole milk, cinnamon and sugar.
Also, I like making cayenne chicken then taking the drippings from the pan and making a gravy to put on saffron rice so that it's hot and spicy

I like Thai fried rice....

A little thai fish sauce, a tad crushed red pepper, a little egg, tomatoes, a little soy maybe some ginger and the meat of your choice.

Ma'am adds other veggies but that dilutes the taste to me.

Saute onions, peppers, garlic in butter and a little oil olive, while the rice still has water in the pot add Sazon Goya Seasonings as many packets to make your rice orange/yellow, you can all left over pork, chicken, beef,or other vegetables, a simple Spanish rice.

I also like rice salads with leftover rice. Whatever veggies you have around, some parsley, salt, pepper and some vinaigrette. You can really stretch your meals this way and only have to have a hot kitchen once.
