As far as Wurst goes, I don't want to sound like I'm honking a local horn, but Patak, here in Atlanta (Austell), makes as good a Weisswurst, or Hungarian or Russian Salami, or Kielbasa, or Knockwurst, as I ever had in Berlin. And that, quite frankly, surprised the hell out of me, as I expect local efforts to be inferior.

A couple of the salamis/dry-cured sausages are the best I've ever had. And, like I said, I've had the best from KaDeWe in Berlin.

Dunno of you can read German, but this page talks about the meat Department offering over 1,200 kinds of sausages and hams (smoked products), from all over Europe (ganz Europa)

The Maine Lobster Festival is in my town and it just had it's 63rd year so I think that qualifies for our signature food!

You have not had a hot dog until you've had a Yocco's hot dog. They have been shipped all over the world!

Imagine... a meaty, juicy wiener, grilled to perfection. Take that meat, and place it in a slightly steamed bun, then add spicy mustard, finely diced onion, and Yocco's secret sauce (hot dog chili). The first bite is truly a blissfully epicuriean orgasm. Add a pint of HERSHEY'S chocolate milk, and it's a fast food meal that's almost heaven.

I was the one who mentioned gooeyduck, and yes, they are clams :)  The pronounciation is gooey duck, the spelling varies depending on who you talk to!  I never heard of this dish until we moved to Seattle, so Im thinking it's a city specialty.

Binghamton NY spiedies. Something I've actually never eaten in Binghamton, only at State Fair.
New York thin crust pizza baked in either a wood or coal fired oven.
Coney Island Hot Dogs.
Little Neck clams
Blue Point oysters Both of these from Long Island
New York bagels and knishes.

And NY is the second largest producer of apples, Washington State apples are prettier because of low humidity and therefore less bugs but ours have more taste due to the stress put on them by the changeable weather. The way you require boiling water to get the best out of a tea leaf, you require stress to get the best out of an apple. Try a NY State Royal Gala apple and you'll never eat a Washington one instead.

They had to think of something to do with all those freakin apples!   The same company also makes Berry Sours...again, this state is crawling with Blackberry bushes (they are an invasive weed)..so if you can't beat em, at least make a profit :)

I have never tried Gooey Duck...it's a little repulsive, lol   Seems like something you would find on one of those strange cuisine shows.  Right up there with beetles.


You should try some geoduck clam...It is great shaved really thin and eaten raw as sashimi!

Topolobampo and Frontera are both still there. The great thing is that many chefs that got their start there have now opened restaurants themselves.

Beware to anyone coming to Michigan. If you order one of these here it will NOT be ANYTHING like a hot dog served in Coney Island. They use something that looks like a hot dog but tastes nothing like one and they top it with a spiced ground beef mixture. Just weird....

Very true, Michigan coneys are probably a Detroit signature food, but like Cincinnati "chili", are not like their namesake!

There are many oddball signature foods.

Cincinnati Chili - Cincinnati, Ohio - the stuff tastes good but I still challenge calling it chili. You get ingredients like ground coffee, cocoa powder, but never, ever, any chili peppers.

New Orleans has many signature foods. And there are many imposters.
Beignets - a square puffy pastry similar to a doughnut but much lighter Wonderful with a cup of strong french roast coffee.
Gumbo - contrary to a lot of silly posers claiming to be gourmet chefs, if it doesn't have okra in it, it isn't gumbo. The word "Gumbo" is an archaic french word for, guess what, "okra". Properly, you are ordering either "Gumbo Soup" or "Gumbo Stew". And, no, it doesn't have to have seafood. Venison Gumbo Stew is to die for. The signature flavor is achieved by starting with a black rue (extremely dark cooked flour for a gravy base hydrated with a sweet wine such as Sauterne or a late harvest Riesling) and the spices. You have to have a little bit, at least, of cayenne (powdered roasted red peppers) and filet powder (a mixture of ground sassafras and thyme).
Banannas Foster - Bananas caremlized in a whiskey sauce and served over vanilla ice cream.
Jambalaya - a side dish containing rice, tomatoes, and black eyed peas seasoned with cayenne and filet. Often has a bit of Andouille Sausage chopped up in it.
Andouille Sausage - a hot pork sausage characterized by having larger chunks of ham in the casing instead of the usual finely ground meat.

Speaking of imposters, in the Pacific Northwest you get blueberries posing as huckleberries. The true huckleberry isn't even the same genus as the blueberry.

In Naples, Florida you can get a local dish that you just HAVE to try when you are there: Conch Chowder. You can also get decent conch in Bermuda but I like the seasoning the Greek traditional recipes use in Naples much better.

From Islamorada on down to Key West you can get true Key Lime Pie. The limes from the Keys are NOT like the imposters you find in the grocery. You will be puckered for a week if you try them straight. Key Lime pie is a wonderful tart accompaniement for a fresh Pina Colada.

How to make the perfect Pina Colada.... Florida Frat Boy Style...
"Borrow" a dewar of liquid nitrogen from the chem lab and cumshaw a battery powered elecric drill and paint mixing bit from grounds maintanance.
In the wee hours of the morning when dew is still on the ground, climb over the fence and steal a few field ripened pineapples. Now a filed ripe pineapple is golden and red with not a bit of green on the body. It is so sweet that honey is tasteless beside it. Put the pineapples in the tub full of ice with the beer and head for the beach.
After surfing the morning tide, have some beers and roast some mussels on a driftwood fire and draw straws for who climbs the tree for the coconuts.
Climb trees and retrieve green coconuts.
Put coconuts in the tub of ice with the leftover beer and pineapples.
Go surf the afternoon tide.
When the tide turns, go snorkeling for some langostinos and more mussels and clams.
Gather drift wood for a bonfire.
Put the lobsters and clams in the coals to cook.
Using a K-Bar from the guy in the group who is in ROTC (at least one member of a gaggle of frat boys has to be ROTC) cut up the pineapples and chop the tops off the green coconuts.
For each coconut:
Pour out half the liquid then stuff with pineapple.
Top with a shot or three of black jamaican rum.
Pour in a quarter cup of liquid nitrogen.
Blend with paint mixer on electric drill until the pineapple and soft green coconut flesh is pureed and the whole mess is frozen slushy consistency.
Kick back, chow down, and watch the flamingos fly to roost as the sun sets.

I think the full term is Gooey Duck Clams. That actually refers to the size, they weigh almost a pound. If you like clams, you may love gooey ducks.

Aplets and Cotlets... a brand name for one company's version of Turkish Delight. Yep, that is what they were talking about in Chronicles of Narnia. It is just a middle eastern candy made of pureed fruit and nuts dried to an almost jelly bean consistancy.

The best Key Lime Pie I've ever eaten was at Joe's Stone Crabs in Miami. And having family in Dade and Broward, I've eaten my share over the years. I think it was a chiffon pie and it was half frozen. To die for.

Ice Cream....

The best ice cream I've ever had came from George's Gourmet Ice Cream on Oahu in Hawaii. All are good but try the Poha Ice Cream.

A poha is a polynesian cousin of a persimmon that only grows in high altitude volcanic soil. Nothing else tastes like it.
