Great! I reccommend it highly! Love cheese enchiladas How about these? Chili enchiladas Melt 2 T of butter in a small skillet just large enough to hold a corn tortilla, add 2 T flour, and 2 T chili powder (I prefer Gebhardt's). Stir. Add 1 C water or enough water to make a dipping sauce. Dip tortilla in one at a time. It should not coat the toritlla, just soften it and give it some flavor. You may have to add more water as you go along. Roll tortilla around chopped onion, grated Mexican cheese, and chili con carne without beans. Place in casserole dish. Fill dish with rolled tortillas. Top with remaining sauce. Bake at 350 for about 30 minutes. Can be frozen either before or after baking.
