It sounds delicious to me, probably a flavor similar to tequila shrimp which simply has the addition of 2 T of tequila which is cooked down with the shrimp.

How about red snapper veracruz ? http://www.epicurious.com/recipes/food/views/Red-Snapper-Veracruz-Style-108045 is similar, but I grill the whole fish and serve it with the sauce using fresh, not canned, tomatoes in the summer when the fresh are nice.

That dish sounds yummy...I don't attempt cooking fish much at home though except for shellfish and never whole fish but I would try it! I saw this dish called spinach, poblano and cheese enchiladas at another site within the hour and it sounds yummy..how about it?

I am not much of a salad person but that is one of the salads I do love...mmmmmm...You are making me hungry!

How about asparagus served along side a little bowl of Hollandaise sauce?...I know how to make it from scratch but I buy the stuff in the packet and it suffices (healthier too)...I roast the asparagus for about 12-15 minutes (depending on the thickness) at about 400 degrees...I had some today for lunch....Yum!

I love that dish - just bought asparagus today and look forward to having it in a day or so.

chocolate mousse made with semi-sweet chocolate, eggs, coffee, and grand marnier - whipped cream on the side not incorporated - a la Julia Child?

I bought two new bunches of asparagus too today  as they were only $2.99 a bunch!

I love chocolate mousse and made it a few times from scratch..but not in years..so yes!  I saw this dessert online and most desserts don't grab me anymore but this one did it was described as: "Dark Chocolate cake filled with Zabaglione Ice Cream, the perfect pairing for a summer ice cream cake"....I would never make it but looks yummy..what do you think?

How about the old standard dessert floating island (basically a soft meringue floating in creme anglais with caramel over it?

Wow! Floating Island..an oldie but goodie.....i remember watching an episode of  "No Reservations" on the travel channel where he went to this old school restaurant and they served him that as a dessert..I had heard about it before but I have never tasted it or made it....i would try it for sure!

I want to make this someday "Ina Garten's Bay Scallop Gratin"...I have seen the episode on the food network and it is right up my alley..how about you?

I'm making baked pork chops with Parmesan and sage (http://www.epicurious.com/recipes/food/views/Baked-Pork-Chops-with-Parmesan-Sage-Crust-104711) tomorrow to go with my asparagus. What do you think?

By the way, floating island sounds hard, but it's really not very difficult to make

Love cheese enchiladas

How about these?
Chili enchiladas
Melt 2 T of butter in a small skillet just large enough to hold a corn tortilla, add 2 T flour, and 2 T chili powder (I prefer Gebhardt's). Stir. Add 1 C water or enough water to make a dipping sauce. Dip tortilla in one at a time. It should not coat the toritlla, just soften it and give it some flavor. You may have to add more water as you go along.

Roll tortilla around chopped onion, grated Mexican cheese, and chili con carne without beans.

Place in casserole dish. Fill dish with rolled tortillas. Top with remaining sauce.

Bake at 350 for about 30 minutes. Can be frozen either before or after baking.
