There are more methods of cooking veggies than the "Holy Method."  You boil the hell out of them.

I think that if more people, especially parents, would learn some of these methods, more people would eat their veggies. 

BTW, French fries and ketchup are NOT veggies.

You can, but it is still not a veggie.  If you do it with cauliflower, you can can it a veggie!    Add some parm cheese and fresh ground pepper!  YUM!

Thanks.  I was thinking about it tonight and I wonder if a lot of people's lack of veggie eating is because they don't cook them well.

I actually do like My veggies steamed or raw.  I'm not much of a fruit person, but I don't pass on vegetables.

Aren't potatoes a vegetable? It's not the potato itself that's not healthy, it's what you put on it.

I personally like cottage cheese instead of sour cream.

I am pretty sure they are classed as a starch.  The same with corn. 

I really have no problem with people eating potatoes.  I like them as well.  And the skins are rather nutritious.

Correct.  Potatoes are in fact a starch.  Corn and dried beans are also somewhat starchy as well.  We diabetics must be careful with them.  That said, the fiber offsets some of the effects of the carbs.

Potatoes are a starchy vegetable on the USDA food pyramid. They exchange as starch for diabetics, but they are vegetables.

They are the baseball.

I saw this picture that was supposed to show portion sizing and they used sports projectiles.  IIRC, a hockey puck was your meat/protein, a softball was your fruit/veggies, and a baseball was your carbohydrates/starches.  It was kind of neat and I think that it could be an effective teaching tool for kids and guys watch sports games.

Only if you want your kids insulin resistant and well on their way to type 2 diabetes by the time they hit 30.

Well, it was a picture I saw in a hospital cafeteria.  I do know that for kids the carbs are supposed to be yo-yo sized.  I had always heard that the meat portion should be sized as a deck of cards, so I thought the hockey puck was neat.  (And I could have the wrong sports things for the other two items.)

I use the "plate percentage" method.  I also have a smaller than normal dinner plate that I prefer to use.  50% veggie, 25% carb, and 25% protein.  These are of course just rough guidelines.  I spent many years as a vegetarian, so if anything I have to watch that I am getting enough protein.  I also still cook vegetarian meals. 

Then there are casseroles.  How do you portion size a casserole? 

At some point with the portion issues you just have to do your best to eat a sensible amount, listening to your body on when you are full.

I think roasting vegetables in the oven in a little olive oil and whatever other spices you like makes any vegetable taste good......especially the ones I usually can only eat a few bites of such as broccoli, cauliflower and Brussels sprouts...Last week I even tried parsnips and liked them this way!

That is interesting as I have found that cooking carrots makes them sweeter.  With certain recipes I have it is like having carrot candy.
