Well NOW you have disappointed me.  I expected a comment on this thread from you to read something along the lines of:

The problem with eating vegetables is getting them back in the wheel chair when you are finished.

I prefer most of my veggies raw, in salads.  Carrots, celery, peppers, green beans, tomatoes.....all good raw....fresh out of the garden is even better!  The only cooked veggies I like are corn, green beans (canned...yeah, yeah, I know, but fresh green beans cooked taste funny to me!)  I usually eat a huge tossed salad with a meal....tends to fill me up, then I'll eat the meat.  I like baked potatoes over fries....just a little butter.

I make my fries in the oven too.....no oil.....I think they taste better that way.

That's how I do it too....roasted red pepper, sweet vidalia onion, and zucchini drizzled with a bit of good olive oil, a touch of kosher salt, and maybe another drizzle of balsamic vinegar. Spread on a cookie sheet and roast on the bottom rack, in a hot oven, stirring once in a while. The balsamic vinegar helps carmelize the veggies a bit.

I haven't read all the responses but didn't see this in the first 5-8 or so, roasting.

My favorite is to take beans, broccoli, cauliflower, asparagus, zuchini, squashes, a lot of things and throw them on some tin foil on a cookie sheet.  Mist on olive oil and then sprinkle with whatever spices you are in the mood for -- i.e., garlic and italian spices with parm cheese, my friend like cyanenne, pretty much whatever spice you can thing of.

Throw it in the oven for 10 minutes and wooola, some of the best veggies i have every had -- i also like to squirt some lemon juice or lime juice on them at the end.  Just a lil bit.

BTW kids like them too because they are finger foods lol.  And they can dip them if they need some incentive in ranch or blue cheese dressing.

You can also take pumpkin from a can (100% real -- not pie mix) and mix it with a little cream cheese, butter, a lil splenda and cinnamon, throw it in the microwave for 3 minutes and yum.

To this day, I can't eat certain vegetables at all, and others I can only eat raw.

I refuse to eat peas, yams and sweet potatoes, as well as peppers.  It does not help that I have allergies to 2 of the main foodstuffs in Mexican foods.

One of my childhood friends detested peas.  I'll never forget the day I was watching her eat her dinner.  Her grandmother had gone downstairs for some reason.  My friend opened the window and dumped her peas out at the very same time her grandmother was passing by under the window and the peas landed right on her.  Boy, did she get in trouble!  Not sure exactly what her punishment was, but I was sent home, so I'm sure it wasn't good.

My father was also a member of the "sit there until your plate is clean" club.  Usually, we had meat, potatoes, and some kind of canned vegetable.  Never really had a problem with the vegetables per se, it was the unrealistic quantities of everything I was expected to consume.  They greatly exceeded my appetite and I usually felt very uncomfortable after any meal supervised by my father.  Today, I love almost all fresh and frozen veggies, but dislike most canned (with a few exceptions).

My sister and I got pretty creative with disposing of the hated peas. Mom once picked up my sister's plate after sis had left for a friend's house, only to find a perfect ring of peas underneath. [:D]

Okay, this sounds quick, easy, and tasty, but what do you do with it?  Is it a bagel or toast spread?  Or do you dip something in it? 


Regarding the pea stories:

I never had peas while I was growing up.  My parents both hated them and so they never bought or served them.  Some of the inspiration for this thread came from a discussion with my dad when I remarked how well my immersion blender that I got for the holidays worked on my pea soup recipe.  He was completely shocked and said, "You eat peas?" 

Apparently the only peas my parents had growing up were the canned ones.  I NEVER use those.  I use either frozen or split peas.

Aylee, If you have space in your yard, peas are a different vegetable when you grow them yourself and eat them fresh picked.

I am considering putting in a couple of vegetable plants this year.  Maybe one should be a pea plant!  [:)]

I like peas.  I just know that it is a veggie that has a very short raw shelf life.  Hence I buy the frozen ones.  Or use split peas. 

I tend to kill plants but since Eastern Kansas has enough rain that irrigation is not the norm, I thought that I might just try it.  You know, get a few of those metal basket things and put plants in them.  We do have a metric ton of rabbits around, so I have to think about that too.  I was planning on a couple of tomatoes, and some sort of pepper plant.  Possibly a cucumber, but I have no idea how to make it bunny proof.  I could easily has a pea plant to the list.  I think I have about 6 weeks until veggie planting season.  I can go ask a farmer to be sure.

In my house, it does not matter HOW many carrots I cook up, there are NEVER enough carrots.  It is as if they have their own space-time continuum.
