~fr~

I think h'ors d'oeuvres are a good way to go, as well as a variety of finger foods. If they're eating during their social time pick foods that are easily snacked upon verses a meal so to speak.

Thanks--recipes are always appreciated! :-)

Well, ya see, that is the problem. In about 90% (or more) of my cooking, I do not use a recipe. I kind of go with a "seat of the pants" approach. And I am rather good at it, if I do say so myself, and I do.

That's a true talent.  I, unfortunately, have to cook like a chemist.....  measure it all out, read the cookbook six or seven times to make sure I've added the right amount....put the timer on appropriately....

damn. now I'm getting hungry in addition to tired.  Well, maybe I'll have some good dreams.  dreams of cheese and fruit trays and shrimp pastry....

Tomato mozzarella picks, a fingerfood version of caprese salad.

Half cherry tomatoes and mini mozzarella balls.
Put together half a tomato and half a mozzarella with a basil leave in between.
Secure with a toothpick.
Shortly before serving spray with a bit of olive oil and balsamico, grind on some black pepper.

Tuxedo dipped chocolate covered strawberries?

You melt white chocolate in a double boiler and dip the strawberries and set them on parchment paper to dry.

Then you melt regular chocolate in a double boiler and dip them at an angle on each side so you end up with a triangular while area showing on the top.

Then dot the white area to resemble buttons and bowties.

Here is a photo.

They are really popular with the ladies and easy to do as well.

LadyPact -> RE: Menu ideas needed for Mistress Event (2/20/2011 7:45:54 AM)

I'm terrible about recipes personally.  Instead, I'm going to offer different advice.

Carefully consider providing foods which contain ingredients for allergies.  In this, I would consider dishes that include items such as seafood, peanuts, strawberries, and onions.  If your dish is going to include one of these, back yourself up and offer an alternative.  Bring both on the same tray.  This allows folks to have something when those yummy foods are being served that they can't have.  More than complicated recipes, this will make a much bigger impression on Me because I know that someone wanted to ensure that I didn't have to skip a course.

Best of luck.  I know you'll do a fantastic job.

I love chocolate dipped strawberries, and those are just too adorable for words. NOM!

DesFIP -> RE: Menu ideas needed for Mistress Event (2/20/2011 12:13:32 PM)

Those strawberries are so cute!

Mini quiches, stuffed small mushrooms, pigs in blankets. Think finger foods.
Cookies, not cakes to be sliced.

Biscotti to go with coffee.

Short answer:  Spinach-dip stuffed mushroom caps.

Long answer:  Get a package of Knorr Vegetable Soup Mix (comes either in an envelope by itself or in a box with more than one envelope inside).  Prepare the recipe that is printed on the package for spinach dip.  Take some clean white button mushrooms (easier to get them already cleaned), and with a soft cloth or a soft paintbrush wipe off any remaining dirt, and take off the stems (twist and pull gently).  If they have large vanes (the brown "gills" that show after you remove the stem), using a spoon and cupping the mushroom in one hand to avoid breakage, gently scrape out the vanes.

Then take the spinach dip, and using a spoon, carefully pack it into the mushroom caps.  Take some pretty kale or other dark green leafy vegetable, and lay some leaves out on a plate.  Set the mushrooms on top.

The recipe with detailed instructions:

one 10-ounce package frozen chopped spinach, thawed
one 16-ounce container sour cream
one cup mayonnaise
one package Knorr Vegetable Recipe Mix (the new name I've seen lately, it used to be called "Knorr Vegetable Soup Mix")
one 8-ounce can sliced water chestnuts

The recipe calls for chopped onions, which I sometimes use (about 1/4 cup)

If you haven't thawed your frozen spinach in advance, it's okay.  Open the package and put it in a fine-mesh sieve, and run warm water over it until it is thawed.  Then, for either pre-thawed spinach or the newly-thawed spinach, take a small handful at a time and really squeeze out all the water.  Put each small handful on a plate lined with some paper towels.  When all the spinach is on the plate, press down hard on them with more paper towels.  You really want the spinach to be dry so that your dip is not watery.

Dump your spinach into a bowl and add the sour cream and mayonnaise.  Take the soup mix, and without opening the package, lay it on the counter and crush it with the bottom of a flat glass.  Then open it and add it to your bowl.

Open the can of water chestnuts and dump out the water.  Either run them thru a chopper (I have an attachment for my stick blender that is a mini-chopper), or chop them fine with a sharp knife (about 1/4 inch cubes).  Add them to your bowl.  If you're going to use onion, chop that to the same size as the water chestnuts and add to the bowl.  Stir it all up and then cover and refrigerate at least two hours to soften the dried soup mix.  Then stir dip and taste it.  If it seems strong from onions, you may wish to add a little more mayonnaise.

Some notes:

Water chestnuts are usually in the oriental/asian section of the grocery store.  If you can't find them, ask a store clerk because some grocery stores put them in weird places.

This recipe is very forgiving if you want to add more of something.  For instance, if you can only find a 12 ounce package of frozen chopped spinach, just go ahead and use the whole package instead of trying to measure out 10 ounces of it.  If the dip seems like it's not creamy enough, just add another spoonful of mayonnaise.

When you chop onions, you can chop a whole onion and then measure out what you need, then lay the rest out on a waxed paper or silpat-lined cookie sheet and freeze it.  When it is frozen, scoop it into a freezer bag and store it in the freezer.  This way the chopped onion will stay separated and not clump into one giant lump.  You can then measure out only as much as you need.  Also, if your onions seems a bit too strong, put them in a bowl of cold water and let them sit for 10 minutes or so.  This will make them a bit milder.  Of course, drain well before adding to your dip.

I like bringing fruit kabobs to many social gatherings. It usually goes
over well with all ages. Simpy buy a package of wooden skewers and
cut up some fresh fruit. Grapes, strawberries, canteloupe, pineapple, etc.
You can even buy the fruit already cut!

this would have been my suggestion too, as I prepared those ones at a previous work place (working with disabled adults) where it annoyed the heck out of me that some staff believed that it would be ok to just buy crap food en masse for their parties [8|]

I always put pieces of cheese onto it as well, so not only fruit

Take crescent roll dough, the kind in the pop-n-fresh tube, roll it out whole, cut it into 2-1/2 or 3 inch triangles. Lay a small square of Hershey bar chocolate on one side, fold the other side over and moosh the edges to seal. Bake as usual for the crescent rolls. Cheap, easy and melts-in-your-mouth chocolate goodness.

tazzygirl -> RE: Menu ideas needed for Mistress Event (2/20/2011 11:54:10 PM)

Those crescent rolls make great mini calazones as well!

Aylee -> RE: Menu ideas needed for Mistress Event (2/21/2011 6:26:01 AM)

Or homemade Hot Pockets!

hausboy -> RE: Menu ideas needed for Mistress Event (2/27/2011 5:32:16 PM)

A big thanks to all who sent me ideas and recipes.
The ClubFEM event was last night and I made a few dishes to see what would be popular.

I went with:
1. An assortment of mini-quiches--Quiche Lorraine, 3-cheese, and spinach.
2. A winter salad:  spring mix with blue cheese crumbles, peeled cucumbers (diced) ,fresh raspberries and a fat-free raspberry vinaigrette dressing.
3. A cold tray using the shish-kabob skewers---I made two types:
swiss cheese cubes--stuffed olives--sweet mini gherkins
cherry tomatoes--mozzarella balls--basil leaves

All three were a hit--not a scrap leftover--glad I kept a skewer for myself in the kitchen area :-)

Next time I'll try the shrimp pastry dish and the stuffed mushroom caps.

tiggerspoohbear -> RE: Menu ideas needed for Mistress Event (2/27/2011 5:49:43 PM)

So glad it went well for you Hausboy, hope the next one is as successful for you next time, and that this time you're put in charge of the arrangements so there's no wondering on your part.  I've done it myself before, and know that even though it's hard work, makes it all worthwhile in the end.
