Milk Alcohol Oil Capsaicin is what makes hot sauce hot. 1. Milk is like a capsaicin detergent. It has a protein called casein that strips capsaicin from receptor sites on the skin. Other dairy like sour cream and yogurt work too. 2. Alcohol is a capsaicin solvent. 3. Vegetable oil is a capsaicin solvent.
