I have a lot of fresh strawberries and need some good low fat dessert ideas.

Does anyone have a great low fat strawberry cheesecake recipe?

Or any other great low fat dessert using fresh strawberries?

I've been searching the web, but nothing is jumping out at me. . .

Thank you, thank you. I am looking at the no bake cheesecake now. It's exactly what I wanted, one I could puree the strawberries and add to the cheesy mix and then not have to bake.

I will drizzle the top with semi sweet dark chocolate over fresh strawberries instead of the recommended topping, and I have my own crust.

I really just needed a low fat cheese filling that didn't need baking. I'll let you know how it turns out.

I would make freezer jam with some of them.  That way you can enjoy them year round

That is a great idea, too. First time I've heard of freezer jam and I like the recipe, it's so much easier than canning. I buy fresh fruits and vegetables of all kinds in bulk from the Farmer's Market here and freeze them for year round use. I have several bags of blueberries from last year I did not use.

Do you think I can use them for freezer jam if I thaw them out? They are still in good shape, I have a deep freeze and they are not freezer burned or anything.

i too have new season strawberries. last night i chopped some up and put them in a wonderful italian mondelli fizz. you can cut in half, sprinkle with cracked black pepper and drizzle with dark chocolate. most yummy.

or bash down with a little icing sugar and lemon, leave for a while for flovours to mix, add to low fat vanilla yogurt and crush in marangue nests....low fat eton mess.

mix with raspberries and fizz, add some gelatine and have with low fat ice-cream for an adult boozy jelly and ice-cream.

make fools of them and add rhubarb, keep quite tart, add all spice to taste and have with low fat custard.
