There is no purpose.
The thyroid cartilage tends to enlarge at adolescence, particularly in males. Enlargement of the Adam's apple is considered, like pubic hair growth, one of the secondary sexual characteristics.
The medical term (which is rarely used) for the Adam's apple is "prominentia laryngea" (prominence of the larynx).

Women have them too, they just aren't usually as prominent. It's where cartilage that protects the voicebox meets in the front of the neck.  The cartilage grows faster in adolescence in males, and meets at a sharper angle in the front (and therefore protrudes more) than it does in females.
