No recipes - just a little pastime you might want to get into. I did this, along with a bunch of others, when I was at college: staff-restaurant-crashing.

What you do is get a white coat, or grey warehouse type coat, and pick the store of your choice. (I, and my gf at the time, preferred Harrod's). You take the stairs to the staff restaurant, talking with each other the whole time, and order a meal at great rock-bottom prices. The more casual and nonchalant you look, the less chance you have of getting stopped. My gf and I never did get stopped, actually.

That is hilarious-lol. I think ya'll may get better benefits across the pond though. I can not think of one business here that has a staff dining room, other than hospitals.

My mom used to go eat at the hospital, after she turned 62. She got the senior discount, and could get an entire great meal for inder 3 bucks.

HUH?  I never heard of that!  All I can think of is that the oil content is WAY high.  What you are freezing is the water in the basil, and the oils are suspended.  That is, olive oil doesn't freeze - well, until you get way down.  AND that's how you tell - basically - "good" fats from bad.  Fats that are liquid at room temp? Good - fats that are solid at room temp? bad - like animal body fats.  Beef, chicken fat under skin, etc.

OR

There might be odd preservatives or something or something.

Pesto = FRESH basil, pine nuts (or similar), olive oil (but not alot), fresh garlic cloves YMMV - a touch of salt and that is IT!  What's the ingredient list say?  Did some more research on ingredits - many recipes call for parmesan cheese - now parmesan freezes well, but some blogs say adds "off flavor" to pesto when thawed.  Never heard of THAT, either.

AHHhhh, in typing this, I'll bet the maker used DRY basil, and therefore there's no water to freeze........  What to do?  First thought - drain out some oil and replace with small amount of water...... but, but.... that's not going to make the basil fresh.

In the spice booth, we often get the request - espicailly at this time of year - as to how to make pesto from dried basil - which we stock.  Chef turns them away, citing fresh basil only to make pesto.

I think you're "stuck."  Refrigerate it and use fast - maybe trade off with neighbors for something else.

ETA: One last idea. Contact seller (CostCo) and ask "Wassup wid dat?" LOL! Seriously, being so big, they probably have a "customer service" dept. that can handle a question like that.

Is your CostCo pesto made by "Cibo Naturals"?

If so, they make it with canola oil.  Some olive oil, but way down on list of ingredients. Then we google up freezing canola oil and get:

Canola oil does freeze in a home freezer but does not turn solid because the
freezing point of canola oil is -10 degrees Celcius.

So, there you have it.

i keep telling myself i'm going to make some pesto, but i can't bring myself to pluck my glorious little basil plant... =p it's too pretty...

i grew mine from a tiny baby seed, cradled it lovingly and sang it lullabies! you can't buy that!

Well that's why you keep the pretty one and butcher the purchased one. You won't have any emotional attachment to one not raised from the seed. :D

but honestly, as emo as i am at times... ^.~

cheap food thingie; those little 89cent bags of mixed vegetables; green beans, corn, carrots, peas, lima beans, etc. for some reason, i used to hate those little vegetables, but now i really like them. and they're so versatile. you can cook them up by themselves, mix them with noodles, rice, in soups, WHATEVER!
they're so handy and at that price, you can buy tons of them and just have them around.
