Submission and slavery stems from a person's essence - from their core - and not from anything physical. Where is her/his heart? Does the submissive exude a desire to serve, to please, to do whatever he/she can possibly do to perform to the Dominant's liking? If so, I can not possibly see how one who is physically limited can be perceived as less submissive. It may take more creativity on the Dominant and submissive's part to find new and exciting ways of serving, but it can and has been done. There are services with which I have been physically limited to sustain for an extended duration. Master will push me for as long as he knows I can hold up. What pleases him is not my duration, however, it is that I will push myself and not give up, even if that means great pain on my part. (Mind you, he would not have me do something harmful to my body) I believe those who guage submission by a person's physical abilities are not able to see what -- oooh I'm gonna say it -- true and real submission is. [;)]
