Where I work at(when I can walk ><) we do cakes- but as it is a side bit and not our main thing we don't hire people for their cake writing skills. This means we have a limited number of people who can write on them, thus the notice. If we have the people working who can do a good, untraumatizing job, we are generally happy to do it right away.

But if we were to do it and the good writers weren't there- well you either can't read it, it's in the wrong color, or its just plain messy. Which leads to returned cakes and lost revenue.
And no amount of color dots over the writing can hide it when it's really bad.

I agree.  I have a pretty nice handwriting, but on cakes, it sucks.  My grandmother did cake decorating, and I was the best rose maker, but only she could do the writing on them.

I suspect the company Steven went to had the notice because they wanted to be sure to give a product superior to what you would get at the grocery store.

I can't even read my hand writing on paper, let alone cakes.
Funny enough the girls who always end up being good at it went to catholic school...

usually the cakes you get at a professional small business do special types of writing, almost a calligraphy style that takes talent and time. They don't just scroll it on from a gel pen like at a grocery store. You're going to get your money's worth instead of some cheap ass writing that's barely legible from a 16 yr old kid who hasn't written script a day in  his life.
