Where I work at(when I can walk ><) we do cakes- but as it is a side bit and not our main thing we don't hire people for their cake writing skills. This means we have a limited number of people who can write on them, thus the notice. If we have the people working who can do a good, untraumatizing job, we are generally happy to do it right away. But if we were to do it and the good writers weren't there- well you either can't read it, it's in the wrong color, or its just plain messy. Which leads to returned cakes and lost revenue. And no amount of color dots over the writing can hide it when it's really bad. Ps... I want another rematch Steven
