Apple season - recipes anyone?

It's apple season here in New England and my uncle gave me a big bag of Northern Spy and Winesaps. Except for the apple cake and crisp, none of these recipes uses a significant amount of apples so I am looking for more recipes.

Last night we had chicken with sausages, prunes and apples. This is a nice dish for company.

This was a fun addition to acorn squash: BAKED ACORN SQUASH WITH PEAR AND APPLE

I've made apple cake* twice recently.

Will be making the Moosewood Apple Crisp soon.

I had Apple Ham Grilled Cheese for breakfast, nom nom nom.

Apple and peanut butter is a fave snack.

I looked at chutney and apple butter recipes but don't want to get into a full bore canning/pickling thing - anyone have any recipes for refrigerator storage rather than shelf storage?




* my apple cake recipe is similar to this, but no egg, and mostly doubled, butter becomes 2 sticks, nuts become 1 C, and I add 1/2 c raisins and bake in a 9x13 pan for 1 hr.

Northern Spies make great apple butter. Store in the fridge for a while, but for longer freeze and thaw one jar at a time.

Try making dried apples like the old timers did.

My grandmother would then make fried pies out of them by soaking them for a bit and then cook them and adding cinnamon, butter and brown sugar.

Roll out some pie crust, make apple turnovers and fry them.

Sprinkle with brown sugar and YUMMMMMMMMMMMMMMMMM

When I have apples (my trees did nothing this year) I make and can many many MANY jars of applesauce. It is greatly appreciated by all.

I also make and can apple butter......appreciated by a few, though quite vehemently.

Apple jelly with a kick! We're making some apple jelly but making our own apple juice from the fresh apples, and adding a few thai chili's to the mix (you boil the chilis down with the apples when making the juice), gives the apple jelly a nice hint of spicey hotness and goes great with a bit of cream cheese on crackers.

Try putting fresh sliced apple pieces in your pancakes!

Oatbran muffins with apple and raisen is a favorite here too. A standard cheese cake with apple on top, or make some apple sauce for the freezer.

If you can get apple cider, add a packet of champagne yeast (available at any homebrew supply), put on a fermentation lock and 3 days later, chill and serve. Low alcohol (2% or so) sparkling cider. YUMMMMMMMMMMMMMM

well,.. i love baked apples with cinnamon and a little brown sugar (or real maple syrup), maybe walnuts, raisons or cranberries.. I have been craving that lately.. yum..

but i always used to make them with macintosh apples but very rarely see them in the store any more, its all new varieties and i have no idea which ones might be good for baked apples... if anyone has tried with other varieties please post what kinds/results..

Granny Smiths are really good to bake.

My grandmother always said Wolf Rivers were the best to bake with.

cool. Interesting, i like macs for baked apples but they say they are best as applesauce..
I will try baking the granny smiths and fujis next time i am at the store..

ohhhhh, carmel apples!!! recipe is on LaTs link... I love those too.. remind me of going to the fair..

When I was a kid we'd make apple butter, apple dumplings, apple pies, apple cider, we'd cook it up in sauerkraut, use it in pork sausage and of course apple sauce. Apples were used in just about everything in the Fall to give the foods a bit of a sweet and savory flavor.

I absolutely loved apple butter though especially after mom would make homemade bread. Put it on the bread when it was still warm right outta the oven...mmmmm

I have sliced up my apples and sprinkled them with lemon juice to help prevent browning. Then I bag them up and put them in the freezer. Just take a bag out when you want to make a pie or anything else. Just as good as if they were freshly peeled and sliced. I made a cinnamon chip cake that called for applesauce. I took a bag of sliced apples out of the freezer, thawed it. I cooked them in the microwave for about 5 minutes, then ran them through my small food chopper. Made it the perfect consistency for applesauce. Being diabetic, I added a little bit of Splenda to sweeten it up a little bit. Then added it to the cake recipe. When the cake was done, it was delicious.
