on the thanksgiving thread over in off topic, it was mentioned by myself and lilly that the food was the same for both holidays, which is sort of a fucking drag.

what we've decided to do to remedy that is that we will do the turkey on thanksgiving, and for christmas we will have a fucking surf & turf theme and we'll alternate each year, have the traditional main dish of our home provinces/towns in turn instead of just another turkey fest.

it is my turn this year so we will have roast goose & lobster, then turkey & trout <suze > next year, then tortiere & barbotte <cheri>, and finally roast venison & ideally some sturgeon but likely salmon <heather>.

as side dishes, this year i am planning to have carrots & parsnips mashed together and this roasted squash dish with honey, cinnamon, and brown sugar that suze's family usually has that sounds really fucking good, roasted potatoes, and yorkshire pudding.

for lunch we'll have cornish pasties with gallons of fucking gravy.

so do any of you do anything different from the normal old turkey, do you vary it, or what? and what are your favorite sides?

also, what would be a good desert to go with the goose/lobster meal, i'm stumped at the moment.

fuck! now i'm hungry!

yea, that sounds good. tart and sweet together, and light as well to counter the greasiness of the main dishes.

i like the idea of little tarts as well, that way we can snack on them through the whole evening. we'll have rummy mincemeat tarts as well so that will be nice combination.

that one is definitely on the list of potentials. thanks.

Great stuff Hannah, especially the lobster, we do that a lot for the holidays in Maine.  Just from my bartending side, I think a sparkling wine would go great with that one or Sancerre or even a Pinot Noir since you are doing it with goose which can stand up to that. There are some good Pinot Gris too from Oregon that would probably really be nice with the lobster and goose combo. I know that my favorite wines for just everyday drinking are less than 15 dollars too so don't think you have to spend big bucks to get a great bottle.

We have a  tradition of oyster stew on Christmas Eve with lots of little sides like shrimp cocktail, smoked salmon, and steak tartare. Lots of prosecco and good scotch, and my aunt makes a homemade eggnog that is lethal.

Christmas day is at my Mom and Dad's and we do two things, the traditional roast turkey with all of the sides and then I always make a Prime Rib roast for the people that like that better (me!) with yorkshire pudding, au jus and horseradish roasted potatoes. Don't know if you have heard of Indian Pudding but I make that with a whiskey sauce because I frigging love it. Then the next morning we always have popovers with jam, and coffee with more hard nog and mimosas. And of course rummage around the leftovers.

I'm not really a big tradition person or a big holiday type wither, but I do like the whole Christmas meal/s thing. For years and years I always worked on the holidays since I worked in the restaurant industry and the place I was at never closed (in a hotel) so it's nice to be able to actually celebrate.

ETA I know you didn't ask about wines, I just know more about that then desserts. ;-)

and i'm glad of the wine suggestions because i know fuck all about wine and hadn't even thought about that aspect of shit, i would likely just have popped in at the lcbo and bought whatever the fuck was reasonably priced.

My holiday meals tend to change as much as the crew allows.

Thanksgiving tends to be pretty much the same year after year.......turkey and all the same shit to go with. Dressing, mashed and gravy, some sweet corn I've frozen the summer before, that god awful green bean casserole I hate but others love and toss a fit if I don't make it, Yams with loads of butter, brown sugar, cinnamon and a teeny bit of nutmeg....with the white things on top I could live without. Then there is the potato dumplings with sauerkraut that some have to have. If I don't make home made croissants, my son will pout. And of course the pies. I am a pie making goddess, no humility about that one. Always several pumpkin, a cherry, and whatever else I have had an abundance of fruit from the orchard. Apple, peach, red raspberry. Yes I tend to get a bit carried away but that is the fun part.

Christmas tends to be more fluid and........whatever inspires me. Also, who all is going to be there, and how many days prior to the gathering I get to do the cooking. Sometimes it's a couple different kinds of home made soup. Other times I've made a prime rib roast with a bunch of sides. Quite often I will make a big NY style cheese cake. Just all depends.

Mine is typically english style roast turkey, roasties, sprouts, yorkshires, picallili, duck or roast beef, or Im thinking of going for lamb n mint sauce.and for pudding flaming brandy sauce and christmas pud with a sixpence inside, then...Rich fruitcake with marzipan.

i just chop up some potatoes, a hunk of turnip, an onion or two, some rib eye steak <sometimes i'll use a roast if i'm making a lot of them> and a little minced lamb. i season with salt, pepper, parsely, a little bit of garlic powder, some montreal steak spice, and some worcestershire sauce. wrap it up in a basic little pastry shell and you're off to the fucking races.

take it out of the oven and pour gravy over it and enjoy! quick, easy, hearty, filling and fucking delicious. it also takes me back to my grandparents' kitchen, which is always a nice feeling.

Me either, I don't even know what they are, but they sound good from her description of them.

For Christmas we usually have moose, or if we're lucky maybe some bear stew, that is a real treat!

I've heard bear is strong flavoured and very greasy? But that moose is AWESOME.

I wonder what ever happened to that wild woman Patti that used to clue me in on all things wild Canadian.......after she got divorced and started chasing new man tail she disappeared....

Brilliant! I usually add HP sauce in the mix just a dab to add to the Worcestershire, but then I am a HP fan

The recipe Hannah gave is almost exact to the ones in the UK, the veggies might change somewhat, carrots, swede, turnip, and parsnip often crop up. But acording to the cornish pasties made in cornwall, yep... very yummy, very tasty, and im thinking about making some now!!! ima hungry.
Of course in the OLD days(before I was a twinkle even) they were meat and taters one end of the pastie and jam or fruit filling at the other end, for the cornish miners. a complete meal in a handy eatable "container"

It is, that's why we usually have it in a stew. But it is good just about any way.

Beaver is pretty good too, muskrat isn't. Porcupine either, I don't like that at all. As a funny aside, you know how people say eat crow? Well crow is actually pretty tasty.

And moose is divine. My grandmother and aunt make these spicy moose sausages, you haven't lived till you've had one of those fresh off the grill. Most people prefer my grandmother's, but I like my aunt's better, they have a little more bite and less fat in them.

The wild life here in Iowa is so.........boring.

I've tried most everything we have available but never tried muskrat.......just seemed like something that would taste too much like it smells.

One of my favourite meats is buffalo, with elk being numero Uno! Elk ROCKS.
