Hi all,

I know its before Thanksgiving but i need to plan so i thought i would start this thread in hopes of getting some good ideas with all the creative and cookable people:

This year i want to do something different than the peppermint bark and chocolate covered pretzels for the office and instead do some really unique and fun cookies and candies for Christmas.

What is your favorite christmas cookie or candy recipe -- oh and since i can't cook, please try and be specific lol as to ingredient measurements and cooking times and how much each batch makes.

I always make pralines and fudge. It's part of the 'expected' part of my Xmas packages.

If someone really really wants the recipes.......I will try to remember to dig them out when I have the ambition to get off my lazy ass that seems to be glued to this old leather sofa at the moment.

Fudge i think is beyond my culinary skills lol but are pralines difficult?

The fudge is actually way easier than the pralines are.

Lilly please remind me if I forget, and you really want the recipes, to post them. I am not the most organized person I know and will have to dig through my pantry......I know the general vacinity, in or near a small recipe box or the bigger basket next to the box, on a shelf to the left, about shoulder height. But my filing sucks.

It doesn't help that I have a big, walk in, pantry.

I can start or re-organize with the best intentions but then I go into a cooking frenzy and it will all have been for naught.

I wish i could cook like that lol.  LaTigresse you have a gift if you do this every year and people are begging for more.

People love the peppermint bark i make but it's nothing big, i just buy white chocolate, melt it in the microwave, add some peppermint extract, and pound out candy canes lol mix and spreak on a baking sheet them break up when hard.

i want to do something more.   I really want to try to make those cake pops but not sure how to do it without getting a pan.

Ohhhh Angel I just remembered something my daughter made that is just OMG totally fucking awesomely better than crack good and very easy........one moment and I will google the recipe and post a link.

no worries, my filing is terrible, too. =p i've started keeping back up copies of my recipes on my computer, so if i lose a print copy, i can print another one. =p
i have stuff stashed in cookbooks here and there...cook books stashed under the seats of my dining nook, or in a book shelf in the living room, or in my costume trunk under my bed... haha =p

I, too, would be thankful for the recipes LaTigresse. The Oreo Truffles are definitely going on the list. Those are even easy enough that my kiddies can make them.

Fudge is one of the easiest candies to make.

Traditional truffles are super easy to make.

You simply make a hard ganache:
heat 1/3 cup heavy cream to about 170 degrees (too hot to put finger in but not yet bubbling).
remove from heat and add 12 ounces of bittersweet chocolate (chopped fine)
stir until chocolate is melted and mixture is smooth.
Move to a dish or bowl, cover with wrap or a lid
refrigerate for an 1 to 1 and 1/2 hours till the ganache is set but not hard.

scoop with a small ice cream scoop
roll into balls
coat in crushed nuts or cocoa powder or powdered sugar and serve.

If you want to get real fancy you can coat each ball in a tempered dipping chocolate to make a hard shell before rolling in the toppings.

This is the first christmas where i have to worry about sugar.... lol... no sugar plum dreams for me!

This is a recipe I use for nut brittles which people love.

I like it because it doesn't require watching a candy thermometer but instead you're cooking the syrup till it gets to be a specific color.

The ganache recipe on that page makes soft ganache which is great for frosting a cake but I don't think it would make a good truffle. I prefer my truffles to have more bite.

Baking just isn't among my culinary skills. I make great box brownies, but follow the bos. Secret is adding the chocolate icing.

As for this thread, I would rather have everyone just send me the goodies! I crochet, willin to exchange hats or booties for baked goodies, lol.

Oh that reminds me! I have a rocking recipe for a super intensely chocolate, dense, brownie. To put icing on them would be an total OD. It is so rich that some people cannot eat them. My daughter says "Mom, they are just too much."

Yet sometimes I add Hershey's Dark Chocolate syrup and/or, some chocolate chips.

I will gladly give it to anyone that wants it.

I was just pointing to the video, Ken. I learn better by watching then I do reading.
