If you are experienced enough to read and interpret their non-verbal and unconscious responses to what you/they are doing (meaning very experienced) you might trust those responses more than what they are telling you verbally in deciding how far and where to take them and how quickly. If you aren't that experienced or adept (don't kid yourself) you'd better listen to what they're telling you about how they are responding to what you are doing and operate accordingly.

So how do you become magically experienced enough to read and interpret what they really want versus what they say, when this is your first encounter? Because it doesn't matter how many other people you've played with, you're a newbie with this one.

Welp, unless I am misreading the OP, they weren't asking about a first encounter. They were asking about the "getting to know you" process with a "newbie". Your observation that you can't know a stranger is extremely insightful though. Thank you.
